When you’re wishing you could feel the ocean’s breeze on a hot summer day, this Mermaid Rum Punch is just what you’ll want to make! Whether you are lounging by the pool or headed to the beach, sipping on a cool frozen drink is perfect in summer. I’m excited that Natalie made such a fun cocktail for us today!

We’ve made a lot of rum drinks for you in the past, but this fun ocean blue rum punch might be one of the prettiest for sure! It’s not often that you can say you’re drinking mermaid punch right? This makes me wish I was back in beautiful Turks & Caicos for sure!

I would love to make a few pitchers of these mermaid drinks for a party or girl’s day out. If you like piña coladas, then you’ll love this new frozen drink. I have a few friends with summer birthdays and will definitely be making them!

Easy Ocean Blue Drink

To go along with it’s name, we definitely wanted this mermaid drink to look like a blue tropical ocean. Since this is mostly made of frozen lemonade, the blue look comes by adding Blue Curacao liqueur. Blue Curacao is made of citrus which gives it more of an orange lemon flavor. If you prefer your drink to taste more like a traditional piña colada, omit the Blue Curacao. You could also add a tablespoon of blueberry puree on the top for a similar blue ocean effect.

Mermaid Rum Punch Party Tips:

  • To add more flavor with less ice, which can water down the drink, freeze the banana and pineapple juice ahead of time.
  • Want the blue effect, but don’t have Blue Curacao? You can aways add blueberry puree. Or mix a few drops of blue food coloring into your blender when mixing.
  • Serve with blue drinking straws and and nautical shell cocktail napkins.

  • I love glass cups so you can see the blue swirled drink, but these Mermaid Squad cups are super cute and perfect for when you’re traveling or at the pool.

Mermaid Rum Punch

Cool off with a frozen Mermaid Rum Punch. An ocean blue tropical drink recipe with lemonade, coconut, white rum, banana and Blue Curacao that’s absolute magic!

  • 12 oz can frozen lemonade
  • 2 oz pineapple juice
  • 5 oz white rum
  • 4 oz coconut cream
  • 1 banana
  • 1 cup Ice
  • 4 oz Blue Curacao liqueur
  • Garnish with kiwi and pineapple slices
  1. In a blender, add the frozen lemonade, pineapple juice, rum, coconut cream, banana and ice. Blend well.
  2. Pour the frozen cocktail into glasses.
  3. Add a splash of Blue Curacao over the top of each drink.
  4. Gently swirl a bit of the liqueur into the drink while adding the straw. Do not blend completely.
  5. Garnish with kiwi and pineapple slices.

Add more crushed ice to the glass if needed.

To make this mermaid rum punch frozen without adding ice, freeze the banana and pineapple juice ahead of time.

I made this amazing Sex on the Beach Party Punch for a 4th of July Party last year and it was a hit! You can also call it A Day on the Beach Punch around the kids, but the usual name for this cocktail is the sexy one! This popular Sex on the Beach Drink Recipe is always a hit at any party.

A pretty bright red tropical punch filled with cranberry and pineapple juices along with cream of coconut, vodka and peach schnapps. I am the one who always brings big pitchers of punch to the party. Anytime I can come up with something new, I make sure to post it here on the blog. One of my post popular drinks is Tropical Rum Punch! I also love this Passion Fruit Rum punch.

This easy drink by the pitcher is another great tropical punch to serve at a party for a large crowd. My recipe should be enough to serve around 20-25 people.

This Sex on the Beach drink recipe is an easy tropical punch cocktail to serve to a large crowd at a party!

  • 64 fl oz Cranberry Juice
  • 36 fl oz Pineapple Juice
  • 3 cups Vodka
  • 2 cups Peach Schnapps
  • 1/2 cup cream of coconut
  • Slices of oranges, pineapples and strawberries
  1. Mix all ingredients together into a large pitcher and serve on ice for your Sex on the Beach Drink or Day on the Beach Punch.

Serve this simple Crockpot barbecue chicken and cornbread with a salad for a fast and easy comforting meal. The chicken turns out very moist and it’s hard to stop eating. Even my kids like it! That’s kind of a miracle these days. ha!

Slow Cooker Barbecue Chicken

This easy Slow Cooker Chicken is a delicious family dinner. Crockpot Barbecue Chicken recipe with corn, sweet potatoes, barbecue sauce and cornbread make a flavorful combination!

  • 1 lb boneless skinless chicken breasts
  • 2 1/2 cups barbecue sauce
  • 2 cups frozen corn kernels
  • 1/2 small red onion (diced)
  • 1 small sweet potato (peeled and diced)
  • 1/2 cup water
  • 2 boxes Jiffy cornbread mix
  • 2 eggs
  • 2/3 cup milk
  • parsley
  • salt and pepper
  1. Cut chicken into bite size pieces and place in the slow cooker.

  2. Top with the corn, diced onion, sweet potato and barbecue sauce. Toss together until chicken is coated.
  3. Add the water, a dash of salt and pepper then stir.
  4. Prepare Jiffy cornbread mix as directed on box and spread over the top of the chicken mixture.
  5. Cook for 6 hours on low.
  6. When cooked, remove the cornbread in sections and serve on top of the chicken mixture. Sprinkle with parsley.

You can also use 1 box of cornbread if you like less bread.

Disney After Hours at Animal Kingdom (REVIEW)

Is the Disney After Hours event worth the money? Read about my experience at the Disney After Hours Event in Disney’s Animal Kingdom theme park to get the inside scoop. This special event ticket is available to the public and allows you to stay in the park for three extra hours with access to popular attractions with little to no wait times, character greetings and snacks.

While attending my daughter’s cheer competition at Disney’s ESPN Sports Complex, I decided to splurge and purchase Disney After Hours special event tickets for Animal Kingdom. At $125 per ticket, I wasn’t sure it would be worth the money, plus I already had a four day hopper pass to the Disney parks. Adding extra tickets to what I had already spent seemed like a bit much. Since I write about family travel and love anything Disney, I thought I would go ahead and pay the extra money for the tickets to see what it was like to share with you.

Now that we have experienced the after hours event, I can let you know what it’s like and help you decide if it’s right for you. FYI – I was NOT paid by Disney to write this article. I don’t think I’m on Disney’s radar at all, even though I sure wish I was invited to their social media influencer events! After making these adorable Mickey and Minnie Mouse cookies that went viral… they should contact me right??? ha!

 

What does the Disney After Hours Event Include?

First of all, the Disney After Hours events are only available on certain dates and only one park at a time. The events last from 9pm-12am. When you check in, you get a special wrist band, able to ride select rides, watch select shows, get snacks and meet characters. There are a limited amount of tickets and as of now, I don’t think you need any other kind of park ticket to be allowed to purchase an after hours event ticket. Guests with Disney After Hours tickets can enter the park at 7:00 pm every event night. If you didn’t have a park ticket during the day, you can enjoy the park for a few hours before the special event starts.

What we thought of Disney After Hours at Animal Kingdom

It seems like the Disney park people are still working out the details of these After Hours Events. I found out about it by the ad on their website while I was picking out my fast passes. I wish I had known about this before buying my hopper tickets – I could have saved money and bought a 3 day pass instead of a 4 day one. I saw some of my blogger friends at one of these events, but assumed it was a special event for just for influencers and not open to the public. When I saw that there was an after hours event while I was at Disney, I jumped on the chance to get a ticket before they were sold out. Animal Kingdom is our favorite!!

What We Liked About Animal Kingdom’s After Hours Event

Here are six things we enjoyed about the After Hours event at Animal Kingdom.

1. Little to no wait times

Obviously this is the main attraction for going to a Disney After Hours event. The most popular ride, Avatar Flight of Passage, which normally has a wait time of 2 hours, only had a wait of about 15 minutes when the event started. Towards the end of the night, we walked directly on the ride with no line. We rode our other favorite ride, Expedition Everest, over and over with no line and hardly any people around us!

2. The parks at night are cooler and way less bugs

While we were in Orlando, there were “love bugs” EVERYWHERE. These bugs don’t bite or harm you in anyway, but they are annoying and you could have 5-100 bugs on and around you at a time. Apparently there is only an infestation of these bugs in Florida for two weeks, twice a year. And sure enough, while we were visiting! We began avoiding the parks during the day because of this and another reason the late night after hours event looked appealing. No love bugs out at night!

 

3. Endless treats

We loved the grab and go snack and drink stations around the park. I think the smartest thing Disney did was to have had Mickey ice cream, popcorn, juice bar popsicles and bottled water sitting out on a table near the Pandora entrance where you could just grab your snacks and keep walking. If you preferred a soda, you could wait in a line for one. There are other various snack carts open around the parks with snacks included in your ticket and also something for purchase. Cocktails and beer are not included in your ticket, but available for purchase the whole evening.

 

4. No Crowds

At times, we felt like the only people in the park! If you prefer a loud, party atmosphere, you might not like the after hours events, but we thought it was the coolest thing ever!

I think we only saw 3 strollers the whole time we were there, compared to daytime when there are numerous strollers parked at every ride entrance.

Comparing the After Hours crowd to a normal night at a park:

A few evenings before, we stayed until closing time (11pm) at Magic Kingdom and saw less strollers and people than during the day. Attractions had much longer wait times on a normal park night though. Some popular rides were still over an hour wait. I have to note the night we stayed late… it had just stormed with hail, plus it rained on and off, so that could have been a big factor for less people, less toddlers in strollers.

 

5. After Hours Shopping

Our favorite shop was open when we arrived and we were able buy the last few of the much sought after lollipop Mickey ears. It’s really fun to shop with little to no people in the stores!

6. Fun Entertainment

We didn’t know about the entertainment as we were focused on what rides were open and where to find food. Here is what we did:

DJ Dance Party: In DinoLand U.S.A, we accidentally walked into the dance party with bubbles, fun music and a photo booth. We were the only ones dancing, but that is what we liked about it! ha!

Entertainment We Missed:

Apparently there were character greetings and shows, but we missed them all together on our race to ride the attractions and eat all the food!  I’m sad we missed these things and wish I had known ahead of time to plan better:

Rivers of Light : Show starts at 10 pm in Asia

Pandora Drummers: 10:30 pm and 11:30 pm in Pandora

 

What we did at the Animal Kingdom After Hours Event:

  • Shopped for about 15 minutes before the event officially started.
  • Walked to Pandora to be there at 9pm.
  • Rode Avatar Flight of Passage 2 times in a row (about a 10-15 minute wait both times)
  • Rode the Na’vi River Journey (walked right on)
  • Got fruit bars and water in Pandora
  • Walked towards Tree of Life and grabbed ice cream and popcorn to take on the way
  • Watched the Tree of Life for a bit
  • Stopped for lemonade and more popcorn on the walk to Asia
  • Rode Expedition Everest 3 times in a row (walked right on)
  • Stopped for more snacks and drinks in Asia
  • Walked to Dinoland, rode TriceraTop Spin
  • Danced and took photos at the DJ dance party
  • Rode DINOSAUR (walked right on)
  • Walked back to Pandora to ride Flight of Passage (walked right on)

Once we left Pandora the first time, we only saw 2-20 people at a time around the park the rest of the night.

What we did NOT like:

Don’t get me wrong, we had a blast and enjoyed the park after hours, but here are a few things I didn’t like.

Not enough time:  We wish the event was at least 30-60 minutes longer so we could have done more. If they can’t make the event longer, then it would have been great to have gotten the option to skip the Avatar Flight of Passage pre-show to save time.

Not knowing what was going to happen until we got there: I wish we could have been emailed the event plans, what shops were open and the show times for the evening. I feel we missed out on activities, not being able to plan ahead.

Not many characters: I would have liked more characters around the park. Having another photo spot with a character out in the open where we could have seen them would have been great. I also wish they had a character at the dance party, especially since there was a photo booth there.

The park seemed closed: It seemed more like the park was closed and we were just there walking around as they were closing up. I would have enjoyed a more catered feeling to those of us who bought the pricey after hours tickets. I’ve been to special events at parks where we were treated like VIPS – I think Disney needs to add more of a special treatment touch. I would have liked having more cast members welcoming us and answering our questions. We would have enjoyed some fun music throughout the park so it didn’t seem closed.  Special gifts such as glow stick necklaces or glowing drinks would have been nice.

Was it worth the money?

Let me break it down by what we ate and drank. Note I’m on a diet and with a 12 year old girl who doesn’t eat much. If my son was with us, he would have eaten a LOT more.

  • Mickey’s Premium Ice Cream Bar $5.75 x 2
  • Mickey’s Ice Cream Sandwich $5.75 x 1
  • Fruits of Mo’ara Fruit Bar 4.50 x 3
  • Popcorn 4.50 x 2
  • Bottled Soft Drinks  4.50 x 1
  • Water: $3.50 x 5

2 tickets + tax was $266.26. Take out our total food: $61.75 and the price was actually $102.25 per ticket for no crowds and to ride our favorite rides over and over.

After experiencing high crowds, Florida heat, 2 hour wait times and the infestation of bugs, I definitely think it was worth the price of admission and would do it again next time if it was offered.

Overall, I we had a BLAST at the Disney After Hours event. It will be a memory that my daughter and I will talk about for years to come!

Tips for Riding Avatar Flight of Passage After Hours

1. Take account for time spent walking the path and the pre-show:

For those of you wanting to plan to ride Flight of Passage numerous times, take note of your time. From the ride’s gate entrance where you show your wrist band, it will take at least 5 minutes to walk the path  to the ride entrance point. Then another 7 minutes to watch the two pre-show videos, 6 minutes to ride the ride and another 3-5 minutes to walk the path out of the ride and back to the main entrance. Total time for riding Avatar Flight of Passage is around 22 minutes with no wait time.

2. Enjoy a different experience each time:

When possible, we made sure to switch up where we were in line at the pre-show. If you are with a big group, switch spots with someone else you know. We sat somewhere different each time we rode the ride and it was a totally different experience each time! When I sat on the far outside, I felt like I was flipping upside down, a feeling I didn’t get when in the middle. So be sure to try to change it up while you’re at the after hours event if you can!

3. Just for fun, shout SIVAKO!

Watch for the part during the ride where your Na’vi guide yells “SIVAKO” (see-vah-ko) meaning, rise to the challenge. Be sure to chant it back! We had fun doing that each time. LOL!

In our home, we love all things spicy, especially Buffalo sauce. I think my son goes through a bottle a week! This healthy version of fried cauliflower is up there with my favorite Buffalo chicken dip. As I’m trying to get my family to eat more vegetables, this Roasted Cauliflower has definitely been a hit.

For example, right after taking photos of this recipe, I handed a cup full to my husband. He said “Is this cauliflower? No thanks!” I convinced him to try it and he ate the whole cup! Believe me… it’s good!

Why is Cauliflower so Popular?

Cauliflower is the hot new vegetable. I’m seeing it everywhere recently bought some tasty cauliflower sandwich thins to replace bread. Seeing it everywhere got me wondering why is it so popular? Basically, it comes down to the fact that cauliflower has a similar texture to potatoes, but without all the carbs. With so many people on specific diets such as Keto and limiting carbs, cauliflower become the new potato!

It also has almost as much vitamin C as oranges, plus high in fiber and water, which are important for preventing constipation, maintaining a healthy digestive tract, and lowering the risk of colon cancer.

With all of the great health benefits of cauliflower, I had to come up with a recipe for my air fryer. You don’t need an air fryer for this recipe as I have both the oven and air fryer recipe for you. But it’s so much quicker in the air fryer, that it might make you want to run out and buy one! We use our air fryer so much that I need a second one and I’m dying to get this 8 qt extra large air fryer soon.

How to Choose the Best Fresh Cauliflower

When choosing fresh cauliflower, know that it should have a firm head with no dark spots and bright green leaves attached to the stem. You can store it in the refrigerator in a plastic bag for up to 5 days.

How Should You Serve Roasted Cauliflower?

This Buffalo roasted cauliflower is delicious both cold or hot. Serve it as an appetizer with blue cheese dipping sauce, a side dish with your dinner, loaded in a sandwich or make as a snack when you are craving something savory.

Buffalo Roasted Cauliflower | Air Fryer and Oven Recipe

Easy low-carb Buffalo Roasted Cauliflower that turns out perfectly crispy in an air fryer or oven. This healthy version of fried cauliflower is full of flavor and a recipe you’ll love to make over and over again!

  • 5 cups cauliflower, chopped ((1 medium head))
  • 1/4 cup Buffalo wing sauce
  • 1 tsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1/2 tsp sea salt ((add more to taste))
  • 1 tablespoon white whole wheat flour
  • 1 tablespoon Buffalo wing sauce (for serving)
  1. In a large bowl, add the cauliflower, sauce, olive oil, garlic powder
  2. salt and flour. Toss until sauce coats all of the cauliflower.

Air Fryer Directions

  1. Spray the air fryer grill with cooking spray and add cauliflower.
  2. Set air fryer to 400 degrees and cook for 15 minutes. At 7 minutes toss cauliflower.
  3. Cook a few minutes longer if you prefer charred and crispy bites.
  4. After removing from air fryer, toss with a tablespoon of warmed sauce and serve.

Oven Directions

  1. Preheat oven to 450 degrees.
  2. Coat a baking pan with olive oil or cooking spray and spread cauliflower on pan evenly.
  3. Bake for 30 minutes. Tossing at the 15 minute mark so each side gets crispy.
  4. After removing from oven, toss with a tablespoon of warmed sauce and serve.

This One Pot Enchilada Mac and Cheese is an easy recipe to get dinner on the table in 30 minutes! Dinnertime at my house can be quite hectic. I’m always on the lookout for recipes that are easy to prepare and will win rave reviews from my harshest critics-my family. This one pot enchilada mac and cheese recipes is definitely one of my favorite fast and easy week night meals

Slow cooker meals are great if you’re gone all day and have little time to cook. But if I have a little time at the end of the day, I love to prepare something fresh for my kids and husband. On those days, I turn to my one pot meal recipes.

I created this one pot recipe when I had some leftover ground beef and a can of enchilada sauce. I threw it together with some pasta and shredded cheese and “Enchilada Mac and Cheese” was born! This is my family’s favorite one pot meal. I’m asked to make this at least once a week and I don’t mind, because it’s easy and delicious and only takes about 30 minutes to prepare.

Best Pots for One Pan Meals

A one pot meal is an entire meal in one pan, which means minimal cleanup and less time in the kitchen. Along with my cast iron skillet (perfect for oven and stove top use), I also have a 6 quart sauté pan that I absolutely love!

With one pot meals, size is important because you need to accommodate for your cooking liquid and other ingredients. My favorite pan has a glass lid, which makes it perfect for keeping a close eye on the food while it’s cooking.

I also recommend using silicone spatulas because they are heat resistant and will allow you to rest your utensil in the pan while you are preparing the meal, leaving less mess on the countertops.

How to Make One Pot Enchilada Mac and Cheese

Simple One Pot Enchilada Mac and Cheese Recipe. Have dinner on the table in 30 minutes!

 

INGREDIENTS

  • 1 medium yellow onion, chopped
  • ½ lb ground beef
  • 1 (15 oz) can black beans, drained
  • 1 package taco seasoning
  • 2 cans (14.5 oz) beef broth
  • 1 can (15 oz) red enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, undrained
  • ½ lb elbow pasta
  • 1 cup shredded cheddar cheese
  • 2-3 stalks green onions, chopped

 

DIRECTIONS

  1. Sauté the onion in a large (5.5 qt) sauté pan with lid until translucent and fragrant.
  2. Add ground beef and brown, breaking it up with the silicone spatula.
  3. Once browned, stir in black beans and taco seasoning.
  4. Add the beef broth, the enchilada sauce, and the diced tomatoes and bring the mixture to a boil.
  5. Stir in the dried pasta and return to boiling.
  6. Cover and cook on low for 15 minutes, stirring occasionally to prevent sticking. When liquid is gone, uncover and stir in the cheddar cheese until melted.
  7. Garnish with chopped green onions and serve immediately.

Cute Crawfish Boil Cakes

I had a ton of fun at a Crawfish Boil party this weekend! As you can see, I also had fun making cute crawfish cakes too!

If you’re not from the south, or have friends from Louisiana, then you have probably never been to a crawfish boil. Let me tell you, it’s so much fun when the host dumps a giant pot of steaming hot and spicy crawfish, potatoes and corn onto a long table covered with paper. Then it’s every man, woman and child for themselves!!

This was my husband’s first boil. It was obvious when he got his leg hair singed off after walking by the cooking pots! Luckily he just lost leg hair and not skin. Then I had to giggle when he was surprised that people ate off of the table. Once someone showed him how to get the meat out of the tail, he really liked it and jumped right into the fun. My kids, not so much! ha!

I kept hearing screams from kids who were playing with the live ones and getting pinched. Who knew a crawfish boil was so dangerous?

Cute Dessert Idea

I love making animals out of cake. Thanks for giving me some great ideas for desserts over on Facebook! Many of you suggested key lime pie or lemon bars as they are desserts that compliment fish.

Then someone suggested cute crab cupcakes made with red icing and candy eyeballs. Those cupcakes inspired me to make these funny crawfish cakes!

How to Make Crawfish Boil Cakes

Since crawfish are more long than round, a cupcake wouldn’t work. I was going to bake brownies and cut them into rectangles. Then I lost track of time and realized I only had about an hour before the party began and I had not even gone food shopping yet! No time to bake anything. So I went to the store in search of ready-made brownies or a cake I could cut up.

Pre-made lady fingers were on sale, so I bought a few packages and figured I could make a crawfish with them. I had no idea if they would work or not. In about 20 minutes I had a huge platter full of funny crawfish cakes! They turned out so cute… everyone loved them!

These cute cakes are a fast and easy party dessert for a crawfish boil!

What you will need:

  • 2 packages of ladyfingers or you could bake brownies or a cake from scratch and cut into rectangles.
  • Candy Eyeballs
  • Twizzlers
  • Red Cake Frosting
  • Scissors

How to make crawfish cakes:

  1. Cut Twizzlers to look like pinching claws. Mine were about 2″ long, I cut into one end and trimmed the edges at an angle.
  2. Put some icing on a lady finger and stick the licorice into the frosting. Add more icing on top of the licorice and cake.
  3. Add another lady finger on top of the frosting to make a sandwich.
  4. Add more frosting to the top and attach two candy eyeballs.

That’s it and so easy!! I hope you have fun making these crawfish cakes.
