Grilled Chicken Flatbread Two Ways

We’re soaking in the last lazy days of summer…relishing the fact that I don’t have to care that no one is dressed, fed, or out of their jammies by 8:30 AM — the normal time when the bus comes cruising through the neighborhood during the school year.

But it’s time to prepare for a shift to a more regimented schedule—school days are NO JOKE.

Especially when you add on those extracurricular activities.

My kiddos are both in school all day and then attend Taekwondo class 3-4 afternoons each week…and it takes A LOT to fuel these kiddos through their school day and then to power through an hour of Taekwondo.

We are past the point of fruit snacks, people. No granola bar is going to fit this energy bill.

THESE KIDS NEED FOOD.

Real food that I can whip up quickly, that they’ll happily gobble up, and that is made from pantry staples that I always have around—the sort of pantry staples that I can find conveniently at a local Dollar General store! The key to the handy dandy nature of these snacks are the fact that I used Tyson® Grilled and Ready® Chicken. They are precooked, so warming them up in a takes no time (3-4 minutes) and I can pull out just a few pieces and go about my merry business. That means that I can get these delicious flatbread in the hungry hands of my kids in about 6-7 minutes. BOOM.

And because my kids like the illusion of variety, I have two versions — a BBQ Cheddar and a Chicken Parmesan.

 

Because our schedule is tight, I use the minutes before the afternoon school bus arrives to prep these so they are toasty and ready when the kiddos come barreling through the door. That way they have time to sit down, enjoy their snack, decompress from the day a bit, and get ready for the next part of the day.

CHICKEN PARMESAN FLATBREAD

INGREDIENTS

Flatbread/Pita
Tyson® Grilled and Ready® Chicken
Marinara Sauce 
Mozzarella (shredded)
Parsley

DIRECTIONS

  1. Warm 4-5 pieces of the Tyson® Grilled and Ready® Chicken, per package directions. (My preference is in a skillet.)
  2. Toss the warmed chicken in 2 Tablespoons of marinara sauce.
  3. Take one whole pita flatbread and place the sauced chicken on the bread. Sprinkle with cheese.
  4. Warm under the broiler until the cheese is nice and melty.
  5. Remove from oven and sprinkle with chopped parsley.
  6. Cut pita into fourths.
  7. ENJOY!

*This recipe serves two as a snack, or one as an entree.

FUNFETTI CAKE MIX COOKIES

Ingredients

  • 1 box funfetti cake
  • 2 eggs beaten
  • 5 Tbsp melted butter

Directions

  1. Preheat oven to 350 degrees F.
  2. Mix together all ingredients and spread into a greased 9×13 pan.
  3. Bake for 20 minutes.

These cookies hold up to a little cookie cutter treatment, so if you’d like to spell out a message or are overly fond of hearts (like me) then feel free to get creative. Personally, I think these lend themselves to stars, but you do you.

We LOVE Minions around here so to get my kids excited about eating a healthy snack, I made a Healthy Minions Banana Smoothie!

With a little creativity, a regular smoothie can be an exciting twist on an after school snack or quick breakfast! Plus, I thought these would be adorable healthy treats for a Minions themed birthday party.

We added a few secret ingredients to make this smoothie a little more healthy.

First start with a sliced up banana and a half a cup of yogurt. Freeze the banana ahead of time then you won’t need to add ice!

A Better After School Routine and a $50 Gift Card Giveaway!

Just after the holidays wrapped up and the kids went back to school, we realized that our afternoon and evening routines were off.

Once the holiday to-do’s and commitments had left our calendar, we got…uh…well we got lazy.

There is a fine line, friends, between enjoying your new Legos and just straight up not getting out of the house and moving your body. It was making us cranky and stir-crazy.

We started with something easy. Throwing on our snow gear and heading out to the backyard. Then we were graced with some abundantly sunny days and the bike Santa brought my son was calling his name.

Throwing on our winter gear became a regular thing and the fresh air and activity did us all good.

What this “let’s GET OUT OF THIS HOUSE” mandate actually morphed into was a more present and purposeful after school routine. So even if we weren’t going to get outside, we were sure as heck going to do SOMETHING.

An important part of our after school fun, is a SNACK!

My girl is a 2nd grader and my son is in preschool and re-entry into sharing the house (and Mom) is a bit bumpy sometimes. Plopping them down to have a quick snack gave my 2nd grader a chance to mellow out from her day at school and my preschooler a chance to chatter away at her, telling her all about his day.

We like our snacks to be quick, (we’re burnin’ daylight!) a mix of healthy and fun, (so they are excited about it) and just filling enough so they’ll still dig into dinner in a few hours (learned that lesson the hard way.)

These Fisher Nut Exactly clusters are bite sized clusters of roasted nuts, whole grain popcorn dipped in milk chocolate, dark chocolate, peanut butter, or salted caramel—and they go marvelously with some apples, oranges, or carrot sticks.

Our favorite?

We eat apples by the dozen at our house. I usually have almond butter and honey out for dipping. We tried the Apple Fries with Cinnamon. It took me about 5 minutes to bust this out when they got home from school. It’s a HIT!

That face on the left? That’s literally the first bite she tried and realized how yummy it was. She proceeded to tell me that it was better than every other fruit dip I’ve made. Homemade almond butter, toffee dip, you name it, she liked this better.

The only tweak we made to the recipe? We used Greek vanilla yogurt instead of regular vanilla yogurt. It was so yummy! This little treat is going into our permanent rotation.
