I’m a firm believer that all red velvet cookies should come with cream cheese frosting. If you agree, you’ll be very happy with this easy recipe for Red Velvet Cake Mix Cookies. They really do taste just like a red velvet cake, but much quicker and easier to make!

These easy cookies are not only easy to make, but look amazing on a party table. Remember the movie Divergent? I used these cookies for a movie themed party and they looked awesome. So much cuter than cupcakes and just as simple.

What is Red Velvet Cake?

Is it chocolate or vanilla? This staple of the south recipe is made from rich cocoa-flavored cake with a reddish color. It’s typically prepared as a layer cake with buttercream or cream cheese frosting. So why I wanted to layer my cookies.

Since I’m a little obsessed with making cake mix cookies, adding red velvet cake to my list of cookie recipes was a no brainer. Instead of making the cake from scratch, I preferred to made it quickly with a boxed cake. The flavor is still bursting with flavor and makes super fluffy cookies.

How to make Red Velvet Stacked Cookie Cakes

I turned my cookies into cute stacked cookie cakes. You can make regular cookies with this recipe, or stack them. Depends on how much time you have. Stacking them makes for less cookies per person, so these stacked cookie cakes are good for a small group.

What You’ll Need:

  • Red Velvet Cake Mix Cookies (print the recipe below)
  • Cream Cheese Frosting
  • Chocolate Bark (optional)

You can make the cookies and frosting from scratch, or buy ready-made cookies and frosting from your grocery store. Either way, these make a big impression for something so simple!

All you need to do is stack three cookies with icing in between each one.

I added some dark chocolate bark to the top of mine. You could use any kind of chocolate or sprinkle chocolate shavings over the top.

Red Velvet Cake Mix Cookies

Easy Red Velvet Cookie recipe stacked with cream cheese frosting to make a fluffy cake mix cookie cake. A simple dessert that makes a big impression!

COOKIES

  • 1 box Red Velvet cake mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 tbsp powdered sugar

CREAM CHEESE FROSTING

  • 8 oz cream cheese (room temp.)
  • 1 stick unsalted butter (room temp.)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

GARNISH

  • Chocolate Bark or Chocolate Candy Bar (Optional)
  1. Preheat oven to 375 degrees.
  2. Mix the cake mix, eggs and vegetable oil together.
  3. Roll cookie batter into 1 teaspoon sized balls and place on a lightly greased cookie sheet.
  4. Gently pat down the top of each cookie ball.
  5. Bake for 8-10 minutes.
  6. After removing from oven, lightly sprinkle the top of the cookie with powdered sugar and let cool.
  7. Now make the frosting by whipping the cream cheese until smooth.
  8. Cut butter into pieces and add to mix.
  9. Then add the powdered sugar, vanilla and mix it all together.
  10. Give it a taste and if you want it sweeter add more powdered sugar.
  11. Add frosting to a bag and swirl it on top of a cookie.

Stacked Cookie Cake

  1. For a stacked cookie cake, repeat the previous step with two more cookies and top with a piece of dark chocolate.

Try Making Lemon Cookies with Essential Oil

Since starting to use pure organic essential oils, the lemon oil has been one of our favorites here at Living Locurto. Not only can you use lemon oil in place of lemon extract, but it’s also very healthy.

Lemon essential oil is cold-pressed from the rinds of lemons. It’s great to add to water and now a favorite for me is mixing several drops with frosting!

Honestly, this lemon frosting is what makes these Lemon Cookies so amazing! You can always use lemon extract in this recipe, but if you use pure high-grade essential oils, we recommend you try it!

Lemon Cookies and Lemon Frosting Recipe

Lemon Cookies

Easy lemon cookies recipe with homemade lemon frosting. Soft and fluffy lemon crinkle cake mix cookies! Also a refreshing recipe idea for essential oils.

LEMON COOKIES

  • 1 box lemon cake mix
  • 1/3 cup oil
  • 2 eggs
  • 1 large lemon
  • 1/2 tsp lemon extract (or 4-6 drops dietary lemon essential oil)
  • 1/4 cup lemon drops, crushed
  • 1 cup confectioner's (powdered) sugar
  • parchment paper

LEMON FROSTING

  • 8 oz cream cheese (room temp.)
  • 1 1/2 cup powdered sugar
  • 1/2 tsp vanilla
  • 1 large lemon
  • 1/4 tsp lemon extract (or 3 drops dietary lemon essential oil)
  • 1/4 cup Yellow candy sprinkles (optional)

LEMON COOKIES

  1. Preheat oven to 350 degrees.
  2. Mix cake mix, oil, eggs, lemon juice from the lemon, extract or oil, and crushed lemon drops on medium speed until everything is all smooth and incorporated.
  3. With the dough, make balls a little smaller than a golf ball, and roll them in the powdered sugar. Place each dough ball on a cookie sheet lined with parchment paper.
  4. Bake at 350 for 12-15 minutes. You want the cookies to just start to turn golden but not brown.
  5. Remove from the oven and let them cool on a wire rack.

LEMON FROSTING

  1. Whip the cream cheese until smooth, then add the powdered sugar and mix it all together.
  2. Add the vanilla, lemon juice from one lemon and extract or essential oil.
  3. Give it a taste and if you want it sweeter add more powdered sugar, if you want it a little more tart add more lemon juice.
  4. Wait for the cookies to completely cool then pipe on the icing.
  5. The easiest way to pipe it on is to put the icing in a Ziploc bag and snip a corner. Swirl it on top of each lemon cookie.
  6. Add yellow sprinkles or sprinkle a little of the crushed lemon drops on top!

This is a very sticky dough, but after you drop it in the powdered sugar you will be able to roll it into a ball shape.

After testing one cookie ball in the sugar and you think the dough is too runny, try adding a few more pinches of flower to stiffen up the dough.

Crinkle season is finally here!!  I’m completely against putting up your Christmas tree before Thanksgiving BUT I’m totally ok with starting on Christmas treats.  These chocolate crinkle cookies made with cake mix are the perfect treat to drop off to your neighbors, bring to a holiday party, or eat all alone when your kids are in bed.  The cake mix makes them all too easy to make and kids love helping roll them in the powdered sugar before baking.  Win for everyone!

All of these recipes are made with cake mix and all of them are so easy to do!

For Santa-approved Chocolate Crinkles you’ll need:

1 box Devils Food Cake Mix

1/3 c Vegetable Oil OR 1/2 c Butter, softened

2 Eggs

1 tsp Vanilla

Powdered Sugar

optional:  For extra fudgy cookies, try adding 1 cup of miniature chocolate chips or using a triple chocolate cake mix.

Method:

  1. Heat oven to 350°F.  In a bowl, stir cake mix, oil, eggs and vanilla until dough forms.
  2. Refrigerate dough 15 to 30 minutes, for easier handling. Shape dough into 1-inch balls. Roll balls in powdered sugar. On ungreased cookie sheets, place balls about 2 inches apart.
  3. Bake 9 to 11 minutes or until set. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 30 minutes. Store tightly covered.

How to Shop at Aldi On Instacart

This easy cake mix cookie recipe only calls for four ingredients! All you need is:

  1. A box of Baker’s Corner Classic Yellow Cake Mix

Ingredients

  • 1 Box of Baker’s Corner Classic Yellow Cake Mix
  • 1 15oz can Baker’s Corner 100% Pure Canned Pumpkin
  • 1 SimplyNature Organic Cage Free Brown Egg
  • 2 Teaspoons Stonemill Pumpkin Pie Spice

Frosting

  • ½ Cup Countryside Creamery Unsalted Butter, softened
  • ¾ Teaspoon Stonemill Pure Vanilla Extract
  • 2 Cups Baker’s Corner Powdered Sugar
  • 1-2 Tablespoons Friendly Farms 2% Milk

Topping

  • 1 Bar Moser Roth Premium Dark Chocolate (This is amazing!)

Pumpkin Cookies | Easy Cake Mix Cookies

Delicious pumpkin cookies made in minutes! Easy cake mix cookies recipe topped with buttercream frosting and dark chocolate sprinkles. The perfect pumpkin spice dessert for fall.

Serves: 24 cookies
Ingredients
  • 1 box yellow cake mix
  • 1 15 oz can pure pumpkin
  • 1 large egg
  • 2 teaspoons pumpkin pie spice


  • Frosting:
  • ½ cup salted butter softened
  • ¾ teaspoon vanilla
  • 2 cups powdered sugar
  • 1-2 tablespoons milk


  • Topping:
  • 1 bar dark chocolate, chopped
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix the cake mix, pumpkin, egg, and pumpkin pie spice until it is all well combined.
  3. Spoon generous spoonfuls of batter onto a cookie sheet covered in wax paper. Make sure they are at least 2 inches apart. Swirl the batter with your spoon to make them more round.
  4. Tap the cookie sheet a few times to smooth out your cookie batter.
  5. Bake at 350 degrees for 10 minutes. Move the cookies to a wire rack to cool.
  6. In mixing bowl, whip the butter for a few minutes.
  7. Add in the powdered sugar, vanilla and 1 tablespoon of milk. Beat for 3-5 minutes, adding in another tablespoon of milk if the frosting needs to be thinner.
  8. Cut chocolate bar into pieces.
  9. Place frosting in a piping bag and pipe onto the cookies.
  10. Sprinkle the top with dark chocolate pieces. Store in refrigerator or air tight container.

I’m a sucker for OREO cookies and chocolate cake, so when you mix them together, it’s just about heaven! We absolutely love baking cookies during summer break and this is the perfect recipe to try with your kids. It’s easy, the kids will have fun breaking up the OREO cookies and of course eating the final product.

Cake mix cookies are one of my favorite ways to make cookies. With very little ingredients, you can have delicious homemade fluffy cookies in minutes!

How to make OREO Chocolate Cake Mix Cookies and Cream Cookies

Easy OREO Chocolate Cake Mix Cookies and Cream Cookies. A delicious cake mix cookies recipe filled with pieces of OREO cookies.

 
Ingredients:

  • 1 package chocolate cake mix
  • ½ cup cream cheese softened
  • 1/3 cup vegetable oil
  • 2 eggs
  • 12 OREO cookies (chopped, not crushed)

Heat oven to 350 degrees. Reduce heat to 325 degrees if using a non-stick cookie sheet. Use a large mixing bowl and combine the cake mix, oil and eggs until smooth.

Next, carefully mix in the cream cheese leaving white streaks through your batter. Then gently fold in the OREO cookie pieces.

Yum! Don’t you just want to eat this now?

That’s all you need to do, now they are ready to bake!

After adding your cookies to a cookie sheet, bake for 12-14 minutes. Let cool and enjoy these tasty OREO Chocolate Cake Mix Cookies and Cream Cookies!

It’s time to celebrate! School is almost out! This calls for Funfetti Cake Mix Cookies!

  • 1 box funfetti cake
  • 2 eggs beaten
  • 5 Tbsp melted butter

Easy Lemon Cookies from Cake Mix

Are you ready for something with a little ZING?! How about these easy-as-pie lemon cookies from cake mix? And because we’re hopelessly devoted to chocolate in all of it’s glorious iterations, we’ve added creamy white chocolate chips to the mix.

Of course lemon fans will tell you that this bright flavor is welcome all year round, but Spring seems to be a really fantastic time to break out of the heavy flavors of winter baking. The sun is out! We’re flirting with flip-flop weather! Our kids have come inside with cheeks that are a wee bit too rosy since we didn’t realize it was time to double down on the sunscreen. (Sorry kids!)

Next time baking supplies are on sale at the grocery store, we highly suggest stockpiling some cake mix cookie supplies. You just never know when you’re going to want a little after-school snack. Every day is a good day for lemon cookies from cake mix!

Easy Lemon Cookies from Cake Mix

Ingredients
1 box lemon cake mix
2 eggs beaten
5 Tbsp melted butter
2 cups white chocolate chips

Directions
1. Preheat oven to 350 degrees F.
2. Mix together all ingredients and spread into a greased 9×13 pan.
3. Bake for 20 minutes.

Now while these cake mix cookies are pretty freaking amazing, as-is, you could get buck wild and give them nice schmear of cream cheese frosting (a fantastic recipe can be found here). Maybe some sprinkles. 

I’m a sprinkles kinda girl.

This recipe holds up marvelously to using a cookie cutter to cut the baked cookie into fun shapes.

What kiddo wouldn’t be happy to get sunshiney cookie in the shape of a heart or dinosaur?!

Cadbury Mini Egg Chocolate Cookies

Cadbury Mini Eggs have hit store shelves! THIS IS NOT A DRILL. It’s time to make the most of those chocolatey jewels and whip up Cadbury Mini Egg Chocolate Cookies.

We were first inspired to create a blonde and buttery version of this cookie with regular milk chocolate Cadbury Mini Eggs which you can find here, but never one to be creatively limited in the kitchen, I saw fit to toss a few bags of the WHITE chocolate Cadbury Mini Eggs into my basket to see if my suspicions were true…that a chocolate cake mix cookie and a white chocolate egg could come together for sweet Easter bliss. 

I WAS RIGHT! 

Cadbury Mini Egg Chocolate Cookies have made all of my dreams come true. 

I was so skeptical about the white chocolate ones, but they are SO good with the chocolate cake mix.  The chocolate is like a cross between a brownie and a cookie-a huge hit with everyone that’s tried one!

The best part is that these are the EASIEST cookies that you’ll ever make. The most laborious part of the whole process is copping up the chocolate eggs! 

Cadbury Mini Egg Chocolate Cookies (A Cake Mix Cookie!)

1 box chocolate cake mix

5 Tbsp butter, melted

2 eggs, beaten

1 1/2 Cups white Cadbury White Chocolate Mini Eggs, chopped

Directions

  1. Preheat oven to 350 degrees F.
  2. Mix together all ingredients.  Batter will be super sticky, I find it’s easiest to spread it by greasing your hand and spreading it in a 9×13 pan.
  3. Bake for 20 minutes.

I took them to a party and they were gone fast! We went with squares, but you could totally use a cute egg shaped cookie cutter to cut these into festive shapes for your Easter activities. The bonus of that scenario is that you’ll have extra bits and pieces from the cut-outs that you can snack on…or eat with ice cream.
