Just Like Mom’s Pineapple Upside Down Cake
When I was growing up, every week my mother would make some kind of amazing cake. We would come home from school, my dad from work and we would have dinner and dessert as a family. I remember it all so clear and each time I do, I smile.
While mom made a host of different cakes, one of our favorite cake recipes that she made definitely stands out to me the most… her pineapple upside down cake! I can still see Mom pulling out her huge rectangular baking pan, covering a piece of cardboard in aluminum foil and turning that cake upside down. It was amazing.
How to make a classic Pineapple cake From Scratch
I had not eaten a pineapple cake in years, but when I made this fun version of mom’s recipe with ice cream for summer, it brought back so many wonderful memories.
As you can see, I added vanilla ice cream, which is a simple twist to create a Pineapple Upside Down Ice Cream Cake! I’m a firm believer that nothing makes cake better than a nice scoop of ice cream! Something about the butteriness of the cake, paired with ice cream makes it so much more delicious.
With this recipe, we combine ice cream as a layer with the cake. What better way to enjoy a childhood memory!

Pineapple Upside Down Cake Ingredients
First of all, you’ll need two 9″ spring form cake pans to make this cake.
- 2 1/4 cups of all purpose flour
- 1 1/2 cups of sugar
- 1 tsp of salt
- 3 tsp of baking powder
- 3 eggs
- 1 1/2 cups granulated sugar
- 1 tsp vanilla extract
- 1 1/4 cup of Pineapple Juice
- 1/8 cup of vegetable oil
- 1 stick of butter (softened)
- 1 Stick of butter melted
- 1 cup of brown sugar
- Pineapple slices or crushed pineapple
- Maraschino Cherries
Vanilla Ice Cream
Easy Pineapple Upside Down Cake Recipe
For the pineapple cake, mix all dry ingredients and then add in your wet ingredients. Mix well.
In one 9 inch pan spring form pan, spread brown sugar evenly to coat the bottom of the pan. Pour your melted butter over it.
Top with pineapple slices and then the cherries.
Pour the cake cake batter over the top. Bake at 350 degrees for about 20 minutes or until top springs back at the touch. You can also stick in a toothpick to check if it is ready. If it comes out clean, it is done!
Allow the cake to cool inside the spring form pan and spray another cake pan with nonstick spray. Pour in your remaining batter and bake until done. Allow both layers to cool completely.
With a cup full of warm water, place your spatula in the warm water. Let your ice cream sit until it is slightly softened. Begin spreading ice cream on your pineapple/cherry layer of cake while in the spring form pan. The spring form pan will help the ice cream stay in place.
How long should I freeze this cake?
Freeze until the ice cream is firm about 15-30 minutes per layer.
Start with the first layer, then remove from freezer and top with the second layer of cake and freeze until ready to serve. After placing all the layers, allow Pineapple Upside Down Ice Cream Cake to completely freeze before slicing and serving.
How to Get Pineapple Upside Down Cake Out of the Pan
Place your cake stand upside down on top of your spring form pan, flip it over, remove the spring form and voila! Since this cake is frozen, dip a knife in warm water to make slicing easier.
Pineapple Upside Down Ice Cream Cake
An easy homemade Pineapple Upside Down Cake recipe turned into an ice cream cake. This classic cake combined with vanilla ice cream makes the perfect summer ice box cake.
- 2 1/4 cups all purpose flour

- 1 1/4 cup pineapple juice
- 1/8 cup vegetable oil
- 1/2 cup butter, softened ((one stick))
- 1/2 cup butter, melted ((one stick))
- 1 cup brown sugar
- 1 cup pineapple slices or crushed pineapple
- 2 tbsp Maraschino cherries
- 2 cups Vanilla Ice Cream
- Preheat oven to 350 degrees.
- For the cake, mix all dry ingredients into a mixing bowl, then add in your wet ingredients. Mix well.
- You will need two 9″ springform pans.
- In the first pan, spread brown sugar evenly to coat the bottom of the pan. Pour your melted butter over it. Top with pineapple and cherries.
- Pour in half of the cake batter.
- Spray another cake pan with nonstick spray. Pour in your remaining batter and bake until done.
- Bake at 350 degrees for about 20 minutes or until top of cake springs back at the touch.
- Allow the cake to cool inside the spring form pans completely before adding layer of ice cream.
- Let your ice cream sit until it is slightly softened.
- Place a spatula in a cup full of warm water.
- While the cake is still in the pan, spread ice cream onto the pineapple/cherry layer of cake using the spatula, dipping continuously to help smooth out the ice cream. The spring form pan will help the ice cream stay in place.
- Freeze this cake layer until ice cream is firm. About 15-30 minutes.
- Remove from freezer and top with the second layer of cake.
- Place your cake stand upside down on top of your spring form pan, flip it over, remove spring form and you’re done!
- After placing all the layers, allow cake to completely freeze before slicing and serving.
Stick a toothpick into the baked cake to check if it is ready. If the toothpick comes out clean, it is done!
Dip a knife in warm water to easily slice the frozen cake.

If you’ve never seen these films, be sure to get caught up the first two, because they are super cute! In How to Train Your Dragon: The Hidden World , Hiccup is the Viking chief and ruler of Berk. He created a gloriously chaotic dragon utopia along with his fearsome Night Fury dragon, Toothless.
When the sudden appearance of female Light Fury coincides with the darkest threat their village has ever faced, Hiccup and Toothless must leave the only home they’ve known and journey to a hidden world thought only to exist in myth.
How To Train Your Dragon Cake Tutorial
The secret to making a How to Train Your Dragon cake is to use my printables! I spent a long time designing printables that would work just right for a small cake. I wanted to turn both dragons into cakes, so I used 5″ round cake pans. Click here for a 5″ round cake pan.
For these printables to work perfectly, I suggest a 5″-6″ cake pan. You can make one cake, but they sure look cute when you have both the white and black dragons together!
How To Make Dragon Cake Printables
First, download and print these dragon cake printables in the link below (scroll down). Once you have printed and cut them out, start by hot gluing 1/2 inch cut paper straws onto the back of the eyes.
I used toothpicks to attach the other dragon parts into my cake.
IMPORTANT: When the paper touches the buttercream frosting, it can make the paper greasy. When inserting your printables into the cake, try leaving a gap between the paper and the cake if possible. I suggest not adding the printables until right before you are ready to serve the cake.
Toothless is black, so if the frosting touches the black paper, you can’t see any residue. Isn’t he cute?
I love how pretty the Light Fury cake turned out!
Make sure your printables do not touch the white dragon cake, because you will have some of the frosting soak into the white paper. My fluffy white cake recipe is perfect for this dragon!

How to Train Your Dragon White Cake Recipe
Easy How To Train Your Dragon Cake tutorial. Fluffy white cake recipe for a Night Fury or Light Fury dragon cake. A perfect birthday party cake!
- 3 cups cake flour
- 2 cups sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 5 egg whites (room temperature)
- 1 entire egg (room temperature)
- 1 cup whole milk
- 2 teaspoons pure almond extract
- 3/4 cup unsalted butter
White Buttercream Frosting
- 1 cup butter (softened)
- 4 cups confectioners sugar
- 2 teaspoons clear vanilla extract
- 1 pinch of salt
- 3 tablespoons milk
- Black food gel (if making Night Fury)
White Cake Directions
- Preheat oven to 350 degrees. Grease and line three 5” or 6” inch cake pans with parchment paper. (I used 5 inch for my dragon cakes)
- Whisk the eggs, milk, and almond extract together in a large bowl; set aside.
- In a mixer, gently combine the flour, sugar, baking powder and salt together.
- Add butter and mix on low until you get a crumbly texture.
- Add the liquid mixture a small portion at a time and mix until light and fluffy.
- Pour the batter evenly into each cake pan.
- Bake 25-30 minutes. You don’t want to over bake! Check at 15-20 minutes to test if it’s done by placing a toothpick in the middle of the cake. If it comes out clean, the cake is done.
- Let the cake cool for 15 minutes before removing from the pans.
- In a mixer, cream the butter until it is smooth for about 3 minutes.
- Add the confectioner’s sugar 1/2 a cup at a time then mix another minute.
Add vanilla, a pinch of salt and milk until frosting has reached the preferred consistency.
- If making the Night Fury cake, mix in black food gel a few drops at a time until you get the desired color.
Assembling the Cake
- Make the top of the cakes even by using a serrated knife and cutting the cake top to level the surface.
- Place bottom cake layer on a cake turntable or cake board and spread frosting to the top. Repeat until entire cake is assembled.
- Complete frosting the cake by adding one thin layer all over and placing cake into the refrigerator for 10 minutes. Then add the final layer of frosting.

*This recipe is for 1 cake. Double the cake recipe to make two cakes.
If you prefer to use a cake mix: Use 2 cake mix boxes for one three layer cake.

His birthday is right after Christmas, which is usually a busy time when I don’t have a lot of time to party plan or bake a cake. Buying a cake from our local bakery was the quickest thing I could do, but it wasn’t that exciting looking. I need it to be extra fun and special. That’s when I went looking around for some chocolate treats that would be perfect for decorating his cake.
You only turn 16 once and I think the cake turned out super cute. It definitely became the ultimate chocolate birthday cake!

After sharing this cake on my Instagram story, so many of you sent me the sweetest messages that I thought I should put the directions on my blog. I think a lot of chocoholics would love a cake like this.
The birthday boy loved his cake and I had so much fun making it! It truly took longer to unwrap the treats than it did to decorate with them. I can’t believe he’s 16! Seems like yesterday I was planning his Mad Science party and Farm 1st Birthday!

How to Make the Ultimate Chocolate Birthday Cake
I love making easy chocolate desserts and this is on of the easiest cakes ever! Start with a 10″ round chocolate cake. I bought one from the local grocery store bakery, but you could certainly make one. If you need a good chocolate cake recipe click here.
Don’t worry about how the cake looks, because you’ll just be covering it with goodies.
Decorating Your Chocolate Cake
Here is a photo of the chocolate treats I got for my cake. These are most of my son’s favorite things. When decorating your own cake, be sure to get your birthday girl or guy’s favorite things. Don’t worry about calories… they don’t count on birthdays right? Ha!
Since I had a bunch of cookies left over, after decorating the top, I stuck them on the side of the cake.

Ultimate Chocolate Birthday Cake
Make the Ultimate Chocolate Birthday Cake in minutes with this easy no bake dessert idea! A fun semi-homemade cake for a chocolate lover.
- 1 10" Round Chocolate Cake with chocolate frosting
- 12 Chocolate Chip Cookies
- 8-10 OREO cookies
- 3 M&M Brownies
- 2-4 Hostess Cupcakes
- 5 Chocolate Donuts
- 2 Reese’s candy
- 5 Pocky candy
- 2-4 Wooden Skewers
- Gently scrape off a bit of chocolate frosting from the cake and place it on a plate to use as glue to hold the cookies and candy together.
- Start by adding a cupcake and press brownies and cookies around it into the cake to hold in place.
- Add 3 chocolate donuts to a skewer and place into cake.
- Add a cupcake and brownie to another skewer and place into cake.
- Stack OREO cookies in various spots using frosting to hold each one together.
- Decorate the rest of the cake top with additional treats and Pocky candy.
- Attach cookies around the edge of the cake.
- Decorate with a cake balloon and candles. Enjoy!
