One Chicken Strip…SO MANY Options

This is a sponsored post written by me on behalf of Tyson Foods, Inc. All opinions are entirely my own.

Every kid loves a chicken strip.

And let’s be honest, I never met a chicken strip that I couldn’t muster some serious affection for, as well.

I’m here to tell you—the mighty chicken strip is the unsung hero of the dinner table.

Why? Because my kids LOVE them and will gobble them up with enthusiasm, AND with a few extra ingredients and prep, Mom and Dad can enjoy a quick and tasty grown up dinner too.

The best part? The folks who make Tyson® chicken have a whole bunch of products that are raised with no antibiotics EVER.

Just look for the specially marked packages at Walmart—including nuggets, strips, Any’tizers® snacks and drumsticks—to fill your freezer full of antibiotic-free, easy to prepare chicken that will solve your growling tummy situation in a hurry on even the busiest of school nights!

Tyson Foods has a long-standing dedication to quality and their chicken is raised no antibiotics ever and is made with 100% all natural* ingredients (*Minimally processed; no artificial ingredients).

This makes my mom brain happy—I worry about whether or not my kiddos are getting enough protein for their active, growing bodies. Whenever I can visit Walmart and stock my freezer and fridge with delicious food that they enjoy (and will wolf down without complaint), I am THRILLED.

Bonus points for quick meals that I can get on the table after a busy afternoon of extracurricular activities.

And if I can multi-task my cooking, prep, and ingredients so that I get to eat something that resembles an adult-friendly meal? Well, friends, that’s HAPPY DANCE material.

My go-to Tyson chicken BFF are the fully cooked crispy chicken strips.

In the time it takes to heat them up in the oven (a quick 18-20 minutes), I can prepare the rest of any number of very family-friendly meals.

Think of the possibilities:

Chicken Wraps
A warm tortilla, some shredded lettuce, a few chopped veggies, salad dressing, and shredded cheese.

Mini Chicken Parmesan
Whip up some spaghetti and marinara, toss some mozzarella on those strips for the last few minutes in the oven and BOOM!

Teriyaki Rice Bowls
Rice, steamed broccoli, steamed carrots, some teriyaki sauce and chopped chicken strips.

Fettuccini Alfredo
Can you think of anything better than crispy chicken tossed with noodles and a creamy cheese sauce? Me neither.

Or the crowd favorite at my house—chicken strips with dipping sauce, veggies, fruit and some cheese.

Oh and most of that can be repurposed as a CRAZY TASTY salad for me!

See what I mean? Tyson chicken to the rescue.

CRISPY CHICKEN SALAD

Ingredients:
-Spinach
-Chopped Tyson no antibiotics ever crispy chicken strips
-Sliced Apples
-Chopped Pecans
-Dried Cranberries
-Shredded Sharp Cheddar Cheese
-Vinaigrette (my favorite is a red wine variety)

Directions:

  1. Warm Tyson fully cooked crispy chicken strips according to package directions.
  2. Assemble additional salad ingredients.
  3. Chop warmed crispy chicken strips and add to salad.
  4. Enjoy and high-five yourself for getting something so delicious on the table in under 20 minutes.

Hey! One more thing—if you’ve got a hankering for some good old fashion chicken breasts or strips, Tyson chicken products have you covered there too. Just look for the specially marked “No Antibiotics Ever” packages in the freezer and refrigerated section.

Those frozen chicken breasts are my go-to for slow cooker meals. Try a few chicken breasts in the slow cooker with a BBQ sauce and you’re well on your way to shredded BBQ chicken sandwiches for dinner.

That plan also works marvelously with buffalo sauce if you like your chicken a little on the SPICY side.

Stock up on the whole Tyson chicken line of “no antibiotics ever” products at your local Walmart and make your dinnertime schedule a WHOLE LOT EASIER!

*No artificial ingredients, minimally processed.

Grilled Chicken Flatbread Two Ways

This is a sponsored conversation written by me on behalf of Tyson Foods, Inc. The opinions and text are all mine.

We’re soaking in the last lazy days of summer…relishing the fact that I don’t have to care that no one is dressed, fed, or out of their jammies by 8:30 AM — the normal time when the bus comes cruising through the neighborhood during the school year.

But it’s time to prepare for a shift to a more regimented schedule—school days are NO JOKE.

Especially when you add on those extracurricular activities.

My kiddos are both in school all day and then attend Taekwondo class 3-4 afternoons each week…and it takes A LOT to fuel these kiddos through their school day and then to power through an hour of Taekwondo.

We are past the point of fruit snacks, people. No granola bar is going to fit this energy bill.

THESE KIDS NEED FOOD.

Real food that I can whip up quickly, that they’ll happily gobble up, and that is made from pantry staples that I always have around—the sort of pantry staples that I can find conveniently at a local Dollar General store! (Don’t miss our $50 Dollar General gift card giveaway at the end of this post.)

Like these Grilled Chicken Flatbreads.

The key to the handy dandy nature of these snacks are the fact that I used Tyson® Grilled and Ready® Chicken. They are precooked, so warming them up in a takes no time (3-4 minutes) and I can pull out just a few pieces and go about my merry business. That means that I can get these delicious flatbread in the hungry hands of my kids in about 6-7 minutes. BOOM.

And because my kids like the illusion of variety, I have two versions — a BBQ Cheddar and a Chicken Parmesan.

Because our schedule is tight, I use the minutes before the afternoon school bus arrives to prep these so they are toasty and ready when the kiddos come barreling through the door. That way they have time to sit down, enjoy their snack, decompress from the day a bit, and get ready for the next part of the day.

You can pick up a whole basket full of handy and delicious Tyson® and Jimmy Dean® products from Dollar General that can help you get yummy food into the bellies of you and your family, even when your school day schedule is BANANAS.

Baked Cheesy Bacon Chicken Tortellini

It’s that time of year when I start looking for family dinner ideas that are easy, include multiple food groups, and are warm in my belly.

The return of the school year brings cooler temps and hungrier kiddos, so gone are the days of our dinner plates being half watermelon. (WHAT. Don’t act like you didn’t do it.)

Bonus points for meals that can be assembled with pantry staples and foods that I tend to cook in bulk, so I can have leftovers for easy meals — things like chicken and bacon. If I’m going to cook up either of those, I might as well make enough to stock my fridge.

Because a slice of thick cut bacon, chopped into a salad? OH, HEY. That makes me happy.

Those pantry staples? BOOM.

Baked Cheesy Bacon Chicken Tortellini

This pasta was the star of the show in my cold pasta salad that came on every camping trip last summer (cooked Barilla Collezione Three Cheese Tortellini, thick slices of salami, black olives, mozzarella, tomatoes…so tasty.)

But as I mentioned, it’s not really pasta salad season…at least not at my house.

But it most definitely is tasty, cheesy, bacony, YUMMY season at my house.

Baked Cheesy Bacon Chicken Tortellini

This recipe for Baked Cheesy Bacon Chicken Tortellini is easy to assemble ahead of time and pop in the oven when your dining room table is besieged by hungry children. The Barilla Collezione Three Cheese Tortellini cooks up beautifully in 10 minutes flat and the Barilla Traditional Pesto Sauce adds so much delicious fresh, garlicky flavor that you can truly toss this together and deliver a rich tasting dish to the dinner table.

Here’s how you whip this up!

Baked Cheesy Bacon Chicken Tortellini

Heat 2 tablespoons of oil in a non-stick pan. Pan fry chicken until fully cooked and lightly browned. Remove from heat and chop into bite-sized pieces. Set aside.

Cook 4 strips of thick-cut bacon. Remove from heat, drain excess fat, and chop. Set aside.

Warm frozen peas. (Cook according to package directions, but remove from heat before they are fully cooked. Unless you like your peas super mushy. You do you.)

In a bowl, combine the jar of Barilla Pesto with ¾ cup of Half-and-Half until well combined. Add 1 cup of shredded mozzarella to the sauce. Set aside.

Baked Cheesy Bacon Chicken Tortellini

In a 9×13 baking dish, combine the prepared tortellini, chicken, bacon, and peas and mix gently, taking care not to break the pasta.

Baked Cheesy Bacon Chicken Tortellini

Pour the sauce mixture over the contents of the baking dish and gently stir to coat the pasta mixture.

Baked Cheesy Bacon Chicken Tortellini

Cover the coated pasta with 1 ½ cups of mozzarella and ⅓ cup parmesan cheese and then bake in a 400 degree oven for 15 minutes.

Baked Cheesy Bacon Chicken Tortellini

Dish up a bowl for yourself…you know…to make sure it’s okay for everyone else to eat.

Baked Cheesy Bacon Chicken Tortellini

AND both the Barilla Tortellini and Barilla Pesto Sauce are available in 2-packs at your friendly neighborhood BJ’s store for a limited time only! They are made with all-natural ingredients and are great together or separate, hot or cold!
