I Love Chickens

My love of chickens started when I got my first pet chickens around the age of four. Here I am with Chicken Little and Chicken Big! I was SO EXCITED! ha!

Chicken and Baby Chick Cupcakes! Cute Birthday Cake Idea - Amy Locurto with chickens

Forget the pet dog, I was all about the pet chickens. Somewhere, there are photos of me swinging and sliding down my 1970’s swing set slide holding Chicken Little. ha!

Since I can’t have chickens now, I get my chicken fix and fresh eggs by visiting my Aunt Tricia in Oklahoma and her pet chickens! We love chickens so much, we even started a new Facebook page, Chickens are Fun. If you are a chicken fan–> click here to join the fun!

Combine my love of cute party food and chickens, and you have these adorable mama chicken and baby chicken cupcakes.

I asked Pamela to create these cute treats for us and think they turned out so adorable! I love the mama chicken, but the baby chick cupcakes made from mini cupcakes are my favorite. I hope you enjoy these fun party treats!

How to Make Chicken Cupcakes and Baby Chick Cupcakes!

These cute chicken cupcakes were made for a friend who raises backyard chickens. Her chickens lay the most beautiful eggs in shades of blue, green and brown, so I asked if I could trade her some fresh eggs for cupcakes. There was of course no hesitation!

Bake a batch of regular sized cupcakes and mini cupcakes. We used a vanilla cake mix to save time, but if you want to make a fluffy white cake from scratch, try this–> white cake recipe.

After the cupcakes cool, frost your cupcakes with buttercream icing. Either make a batch of your own or buy a few cans of frosting. We used natural (non colored) vanilla colored buttercream for the regular sized cupcakes and light yellow colored frosting for the chicks. You might like this lemon frosting (it’s amazing!).

How to Decorate Chicken Cupcakes

While the frosting is “wet”, dip the sides of your cupcake into toasted coconut making sure to get all around the edges. Here is a simple tutorial on how to toast coconut yourself.

Frozen Pineapple Whip | Animal Kingdom Copycat Recipe

A delicious and simple copycat recipe for a Disney's Animal Kingdom Pineapple Dole Whip with rum! LivingLocurto.com

One of the all-time favorite desserts at Disney is the Dole Pineapple Whip. I have stood in line to get one for nearly 20 minutes, it’s a must get dessert when visiting a Disney Park! Today’s post is a fun one, because I was inspired to create this recipe from our last vacation. As it happens, I’m writing this while on vacation right now! We’re not at Disney, but enjoying the most beautiful beaches in Turks & Caicos. If you want to follow along, I’ll be doing some live tours on my Facebook page and Snapchat (user name LivingLocurto).

As much as I love the Magic Kingdom’s Pineapple Dole Whip, I discovered something even more delicious for adults over at Animal Kingdom. We visited Disney’s Animal Kingdom for the first time last fall, and after walking about 40,000 steps that day, the highlight of my evening was sitting down to have the adult version of the Pineapple Whip with Spiced Rum from Tamu Tamu Refreshments.

YES! They have rum Dole Whips at Animal Kingdom and it’s SO GOOD!

I’ve recreated this recipe to enjoy it at home anytime! If you make it, you might feel like you’re on vacation too. It tastes like piña colada milkshake. YUM!

Delicious Homemade Coconut Cream Pie

Desserts are a funny thing and not everyone loves Coconut Cream Pie, but I bet you’ll like this one! We all have our favorite desserts, you know the ones you would pick over anything else. Maybe it’s your grandmas famous pound cake, or the crazy lady down the streets delicious cookies. Well for me, hands down I choose pie! I really like pretty much any pie, but a chilled Coconut Cream Pie will never get turned down by me.

After trying out several different Coconut Cream Pie recipes, this is the best in my opinion. Not too sweet, not to thick but just right! The only thing to argue about is how long to let it chill before cutting into it. Sometimes patience is the most difficult part of making a pie!

  • 1 cup coconut milk
  • 4 egg yolks
  • 3 tablespoons butter
  • 1 1/4 cup sweetened flaked coconut plus extra 1/4 cup for garnish
  • 1 1/2 teaspoons vanilla extract (Mexican vanilla is by far better tasting! It is all I use)
Whipping Cream Recipe
  • 2 cups whipping cream
  • 1/3 cup sugar
  • 1 1/2 tsp vanilla (again Mexican Vanilla is the best)
Crust Recipe
  • 2 cups flour
  • 1/4 tsp salt

Coconut Cream Pie

This creamy, fresh homemade Coconut Cream Pie Recipe is a mouth-watering dessert wonderful for any occasion!

Coconut Cream Pie Filling

  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 cup half and half
  • 1 cup coconut milk
  • 4 egg yolks
  • 3 tablespoons butter
  • 1 1/4 cup sweetened flaked coconut plus extra 1/4 cup for garnish
  • 1 1/2 teaspoons vanilla extract (Mexican vanilla is by far better tasting! It is all I use.)
  •

Pie Topping

  • 2 cups whipping cream
  • 1/3 cup sugar
  • 1 1/2 tsp vanilla (Mexican Vanilla is the best)
  •

Pie Crust

  • 2 cups flour
  • 1/4 tsp salt
  • 2/3 cup canola oil
  • 1/3 cup milk

Pie Crust

  1. Preheat the oven to 400 degrees. In a large bowl, mix all pie crust ingredients with a fork until well combined, then roll it into a ball.

  2. Wet your counter tops and put a layer of wax paper down. The wet counter will help the wax paper stick, so it is not moving all over the place while you roll out the crust.

  3. Put another piece of wax paper on top of the dough. Again this helps with sticking.

  4. Roll out the dough to about 1/4 inch thick. Make it big enough to fit into your  pie pan.

  5. Once it is the right size, remove the top piece of wax paper and place the pie pan on top of the crust and flip it all over.
  6. Remove the other piece of wax paper. Pat down the crust and crimp your edges nice and pretty. Poke tons of holes in the crust with a fork.
  7. Bake for 8-10 min. until the crust is just golden brown.

Pie Filling

  1. Combine 1/2 cup sugar and cornstarch in a heavy saucepan. Whisk in half-and-half and coconut milk. Bring this to a light simmer.
  2. Now temper the beaten yolks with the hot mixture. Then gradually whisk eggs entirely into the hot mixture.

  3. Bring this all to a boil over medium heat, waiting for it to get nice and thick, stirring constantly so it does not burn.
  4. Boil 1 minute then remove from heat.

  5. Stir in butter, coconut, and vanilla. Let this sit for about 15 minutes and cool down.
  6. Fill up your cooked pie crust. Let the pie get to room temperature, then cover and refrigerate.
  7. Add whipped cream topping to chilled pie.

Pie Topping

  1. Beat whipping cream at high speed with an electric mixer while gradually adding the sugar and vanilla.
  2. Once you have soft, but defined peaks stop mixing.
  3. Spread the fluffy cream on the chilled pie and then top with toasted coconut.
  4. To toast the coconut spread about 1/4 cup of coconut on a cookie sheet and put it in a 400 degree oven for 5-8 min. Watch it closely because it will burn quickly! Let it cool before you sprinkle it on the whipped cream!
