This three ingredient Instant Pot Chicken Tikka Masala is one of the simple dishes I love to whip up for dinner! My husband loves spicy Indian food, me not so much. But once I discovered masala sauce, I changed my tune. If you like creamy tomato soup and a small hint of spices, then you’ll enjoy this easy chicken recipe.

The best part about making it in an Instant Pot is the guaranteed tenderness of the chicken. I love Instant Pot recipes and this Instant Pot Chicken Tikka Masala will melt in your mouth. Served with jasmine rice, it’s a wonderful quick and easy meal. In other words, I highly recommend trying this recipe if you’ve never tried tikka masala!

If you are looking for a Chicken Tikka Masala recipe made from scratch, this is not for you. I’m a busy mom and only sharing my technique for how I make this dish in my Instant Pot.

Tikka Masala Sauce

Chicken tikka is an Indian dish. The masala sauce was added to satisfy the desire of British people to have their meat served in gravy. Chicken tikka masala sauce usually includes tomato purée, cream, coconut cream and spices. The sauce is orange because of the turmeric and paprika spices.

You can make your own sauce from scratch, but to save time for this dish, I’ve found some great flavorful tikka masala sauces.  The brand pictured below is what I like to use for my dinners. I like this brand because it’s not overly spicy and perfect for my personal tastes. You can find a lot of great sauces on Amazon as well.

How to make Instant Pot Chicken Tikka Masala

This chicken only takes 8 minutes to cook, but it will take 10 -12 minutes for your Instant Pot to pre-heat. For a total of about 18-20 minutes of hands free cooking, you can’t beat it!

Pour a few tablespoons of sauce into the Instant Pot pan and add boneless skinless chicken thighs. Cover the chicken with more sauce and add a small amount of water. I used coconut water to give it a sweeter flavor.

You’ll have plenty of sauce when it’s done which is perfect for spooning over rice.

Shred or slice the chicken and place onto a serving plate, spoon more sauce over the top of the chicken and serve with jasmine rice and warm naan.

EASY Instant Pot Chicken Tikka Masala

Fast and easy Chicken Tikka Masala made in the Instant Pot. This spicy, creamy tomato Indian dish is an easy pressure cooker recipe.

  • 2 pounds boneless skinless chicken thighs
  • 16 oz Tikka Masala Sauce
  • 1/4 cup coconut water (or regular water)
  1. Preheat Instant Pot by pressing the sauté button.
  2. Pour a few tablespoons of sauce into the instant pot pan and add chicken thighs.
  3. Turn off the sauté feature.
  4. Pour half of the sauce left in the jar over the chicken, then add water. Make sure the chicken is fully covered. Set the rest of the sauce aside.
  5. Close the Instant Pot lid and make sure the pressure release valve is turned to sealing.
  6. Press manual, high pressure for 8 minutes.
  7. It will take 10 -12 minutes for your instant pot to pre-heat. Then it will start pressure cooking for 8 minutes.
  8. When it’s done cooking, turn the valve to released the pressure. Carefully remove the lid.
  9. Heat remaining sauce in the microwave.
  10. Shred or slice the chicken and place onto a serving plate, spoon the heated sauce over the top of the chicken.
  11. Serve with Jasmine Rice and warm Naan (flat bread).

Easy BLT Wraps with Homemade Guacamole

These tasty BLT wraps are perfect for a busy weeknight dinner or quick lunch.  Enjoy this easy homemade guacamole recipe and bacon, lettuce and tomato wrap recipe.

Dinner doesn’t have to be super fancy and wraps are always a favorite in my family. I’m happy to have Divian Connor, our amazing contributor, back with another quick and easy recipe idea!

We have had numerous wraps for lunch lately, as I am always stocked with flour tortillas. Seriously, you can make any sandwich combination and use a tortilla. I was hankering for a BLT sandwich, but my kids had used the last of the loaf of bread the day before on peanut butter sandwiches… but hey, I had flour tortillas, avocados and lemons. I decided to give it a go and really, this BLT wrap was so yummy! And bonus, my kids loved it.

Quick and Easy Homemade Guacamole

I have a new-found love of avocado and each time I head to the grocery store, I am buying four or five at a time. I love the creaminess of avocados. They are just so refreshing!

For the easy chunky homemade guacamole, I used one avocado, the juice from one lemon, two tablespoons of sour cream and a little salt and pepper to taste.

Using a spoon, mash and mix everything together. I like mine chunky, and really, the avocado is so creamy, the chunks melt in your mouth.

How to make BLT Wraps

For the wrap, cook a few slices of bacon and cut into chunks or crumble. Slice fresh tomato and cut up a bit of lettuce. I love lettuce with color and texture, so I purchased a small package called Artisan Lettuce I got at the grocery.

Simply layer your guacamole on your flour tortilla, then add lettuce, tomato and bacon pieces. Wrap by taking one side of the wrap and tucking it under the ingredients and roll.

BLT Wraps with Homemade Guacamole Recipe

BLT wrap with easy homemade guacamole recipe. Bacon, lettuce and tomato wraps are a delicious idea for lunch or a quick dinner.

  • 4 slices bacon, crumbled
  • 1 tomato, sliced
  • 1 cup lettuce
  • 4 flour tortillas

Homemade Guacamole

  • 1 avocado
  • 2 tablespoons sour cream
  • 1 lemon
  • 1/8 teaspoon salt
  • 1 pinch black pepper

Guacamole

  1. Use a spoon to scoop out the avocado into a medium bowl. Then add the juice from a lemon, sour cream, salt and pepper. Mash and mix with a fork, set aside.

My children love french toast. It is one of those breakfast options that seems like a lot of work, but really, it is simple and easy to make. And takes just as much time as pancakes! What can be better than combining Nutella, strawberries, french toast and whipped cream? It is a sure breakfast winner!

You will need for Nutella French Toast:

  • Slices of bread (I used sliced french bread)
  • 3 eggs
  • 1/2 cup of milk
  • 2tbsp sugar
  • 1tbsp cinnamon
  • Nutella
  • Strawberries
  • Whipped Topping (softened)

Servings: 4 french toast sandwiches

Spread generous amount of Nutella onto 4 slices of bread. Top with remaining bread.

In bowl, combine eggs, milk, sugar and cinnamon, mix/blend well. You can add more milk for less egginess.

Coat both side with egg mixture, allowing it to sit for about a minute or two to soak in the egg mixture.  Let the excess mixture drip off of the bread.

In skillet, coat with nonstick cooking spray and turn heat on low.  I prefer to cook my french toast on low heat to reduce burning of the outside and to ensure that the bread is completely cooked and not soggy. Let cook on low for about 2 minutes, turn over to make sure it is cooking. Continue to turn over once every 3-4 minutes until both sides are golden brown.

Slice each sandwich and top with whipped topping or whipped cream and fresh berries. This would be a perfect Valentine breakfast.

QUICK TIP: To decorate your plate, place a spoonful of Nutella into a plastic sandwich bag. Squeeze into the corner of the bag and clip the tip of the corner with scissors. ‘Pipe’ your design onto the plate before putting on the french toast and berries.

Whether you call it dressing or stuffing, it’s all delicious! I made up a new recipe for Sausage Apple Cornbread Dressing to try this Thanksgiving and it turned out so amazing! This dressing recipe is a fun twist on southern cornbread dressing.

I’m very picky about cornbread dressing since it’s both my husband and mine’s favorite Thanksgiving side dish. I’m happy to share this dressing (or stuffing) recipe with you because it turned out to be so tasty! I will be making it a lot more often for an everyday dinner, not just on special holiday dinners.

A Twist on Cornbread Dressing

I have seen savory recipes that called for apples, but never eaten them in my cornbread dressing, so it was the perfect reason to do some test cooking before the big day.

This dressing recipe is not all cornbread. I mixed in some sour dough bread and used spicy turkey sausage, but you could use any kind of sausage you like. My son said I need to use “real” sausage next time. So I will do as he says. Ha! Personally, I thought the turkey sausage was fantastic and like that it has a lot less fat than regular pork sausage.

Adding something sweet to your savory dressing is perfect!

For the sweet to my savory dish, I used a small amount of apples cooked in white wine. The wine cooked apples gave the apples a nice tart and tangy sweet flavoring which complimented the spicy sausage.

When you’re done, this easy cornbread dressing is ready to be eaten right out of the oven. It goes perfect with your left over white wine!

Apple and Sausage Cornbread Dressing

This Southern Cornbread Dressing is a delicious Thanksgiving side dish or everyday dinner recipe! The combination of apples and sausage lets you enjoy sweet and savory flavors all in one bite.

  • 4 links spicy Italian turkeysausage
  • 2 boxes Jiffy Cornbread Mix
  • 2 eggs
  • 2/3 cup milk
  • 1 loaf sour dough bread, cubed
  • 2 teaspoons butter
  • 3/4 cup chopped celery
  • 3/4 cup chopped onion
  • 3 granny smith apples, peeled a chopped
  • 1 tablespoon brown sugar
  • 1/2 cup white wine
  • 1 tablespoon thyme
  • 1 tablespoon parsley
  • 1 tablespoon sage
  • 1 tablespoon fresh rosemary, diced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 cups chicken broth
  1. Preheat oven to 400 degrees.
  2. Mix cornbread, milk and eggs and bake according to the package.
  3. Cook sausage in a skillet. Remove from pan and slice.
  4. Remove cornbread from oven and cut into small squares and arrange on a baking sheet.
  5. Cut sour dough bread into cubes and arrange on a baking sheet.
  6. Bake bread for 8 minutes or until toasted.
  7. Reduce oven to 350 degrees
  8. Melt butter in a large skillet over medium heat.
  9. Add celery, onions, apples and brown sugar. Cook for 2-3 minutes until brown.
  10. Add wine and cook 2-3 more minutes.
  11. Add thyme, parsley, sage, rosemary, salt, pepper and chicken broth. Stir until fully heated.
  12. Add bread and sausage to a large bowl and pour the skillet mixture over it all.
  13. Gently toss and add more broth if it seems too dry.
  14. Transfer your dressing mix into a baking dish.
  15. Bake uncovered for 20 minutes or until the top is crispy.

To skip toasting the bread, you can bake and cube your bread the night before, then leave it out to dry.

How to Make Easy Sheet Pan Chicken Nachos

Baked Chicken Nachos

Easy baked chicken nachos! These sheet pan baked nachos with chicken loaded with your favorite toppings make the perfect quick and easy dinner recipe or party snack!

  • 3 teaspoons olive oil
  • 15 ounces black beans, rinsed and drained (1 can)
  • 1 teaspoon minced garlic
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground chili powder
  • 1 red pepper (diced)
  • 1 green pepper (diced)
  • 2 cups rotisserie chicken (shredded)
  • 1 tablespoon lime juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 10 ounce bag of tortilla chips
  • 1 cup pepper Jack cheese (shredded)
  • 1 cup Cheddar cheese (shredded)
  • 2 tomatoes (chopped)
  • 1/4 cup green onions (diced)
  • 1/3 cup fresh cilantro (minced)
  • 1/4 cup sour cream (optional)
  • 1/3 cup jalapeño pepper slices (optional)
  1. Preheat oven to 350°
  2. In a large skillet add olive oil and sauté the black beans, garlic, cumin and chili powder in the oil for 2 minutes or until heated through. Toss diced peppers with the bean mixture and cook for another minute.
  3. In a bowl, toss the shredded chicken, lime juice, salt and pepper together.
  4. Spray a 13×9-in. baking dish with cooking spray and layer half of the tortilla chips, pepper and bean mixture, chicken, cheese (leave some for the top), tomatoes and onions.

  5. Repeat the layers and sprinkle the top with a thin layer of cheese and cilantro.
  6. Bake, at 350° for 10-12 minutes or until cheese has melted. Serve with sour cream and jalapeño peppers.

I have finally made one of the BEST baked chicken recipes!! These honey lime baked chicken breasts are SO EASY, super juicy and even so good my picky son loved them. WINNING! With school back in session, I’m happy to get back into a routine of cooking family meals. With so many of my kid’s activities at night, I needed another quick and easy baked chicken recipe that would be done in 30 minutes or less. How To Make Flavorful Baked Chicken Breasts

There are several key factors to making these Honey Lime Chicken Breasts so flavorful and juicy. When I’m in a hurry I will often cook chicken breasts in a skillet on the stove, but often that makes my chicken a little tough or dry especially if I accidentally over cook it! With this simple baked chicken recipe, you’ll never have that problem. The meat comes out of the oven super moist and easy to slice.

Just follow this simple recipe tip to have no more dry chicken and a gorgeous flavorful meal in minutes!

Honey Lime Baked Chicken Breasts Recipe in less than 30 minutes.

Brown the chicken for a few minutes on each side in a skillet before placing into the oven. This gives your chicken a beautiful caramelized look and helps enhance the flavor during baking. Searing your meat will also kill off any unwanted bacteria sitting on the surface.

I like to use a cast iron skillet. If you don’t have one, use any kind of oven safe pan that will work for your stove top as well. If you don’t have any kind of dish that is both stove top and oven safe, use a regular skillet then transfer the chicken breasts into your favorite baking dish for the oven. Of course, you don’t need to brown your meat before baking, but I really love how much more appetizing it looks and the depth of flavor is a bonus!

Honey Lime Baked Chicken Breasts

These amazingly easy honey lime baked chicken breasts are so moist and juicy! Enjoy a delicious family dinner in less than 30 minutes.

  • 4 boneless skinless chicken breasts
  • 2 tablespoons extra virgin olive oil (or grapeseed oil if you prefer)
  • 3 cloves garlic (minced)
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh ground black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon parsley (chopped)
  • 4 lime slices
  1. Preheat oven to 425°
  2. Add olive oil, garlic, honey, lime juice, soy sauce, salt, pepper and chicken breasts to a large zipper bag or bowl and toss together.
  3. Lightly coat a baking dish or skillet that is oven and stovetop safe with oil and place the chicken breasts into the dish.

  4. Brown the chicken breasts over medium-high heat for 2-3 minutes on each side.

  5. Remove from heat and add a large spoonful of marinade over each chicken breast.

  6. Bake in the oven for 15-18 minutes or until cooked all the way through (meat thermometer should read 165°). If your dish is not oven safe, place chicken into a casserole baking dish before putting in the oven.

  7. Remove from oven, top each chicken breast with lime wedges and parsley.

  8. Cover the dish with foil for 5 minutes before serving.

NOTE: Extra virgin olive oil should not smoke in an oven at this oven temperature and with this short amount of baking time, but you can use grapeseed oil or omit the olive oil if you prefer. Grapeseed oil has a higher smoking point than EVOO.

I started making this for my son way back when he was in kindergarten. All he would eat was chicken nuggets and hot dogs then, so I had to try something healthier than fast food nuggets! I was thrilled when he was happy eating my homemade version.

Crispy Oven Baked Chicken

Easy crispy oven baked chicken recipe your family will love for dinner! Only 10 minutes of prep time for healthy oven fried chicken!

  • 4 boneless skinless chicken breasts (cut into bite size pieces or strips)
  • 3 cups Corn Chex cereal (crushed)
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 2 tablespoons butter (melted)
  • 2 tablespoons low fat milk
  1. Preheat oven to 400°.
  2. Line a baking sheet with foil and spray with oil.
  3. Place Cereal, Parmesan, salt, garlic powder, and paprika into a gallon zip lock bag.
  4. Mix milk and butter into a small bowl.
  5. Dip half of the chicken into the milk and butter
  6. Put chicken into the bag and shake it to coat all of the chicken. (Make sure to seal the bag!)
  7. Place chicken on baking sheet and repeat with the rest of the chicken.
  8. Bake for 14-16 minutes, turning chicken over halfway through.
  9. Serve Crispy Oven Baked Chicken with your favorite dipping sauce.

Hi Living Locurto friends! I’m Heidi, lover of champagne and watermelon bubblegum. I adore entertaining and throwing beautiful parties on a budget. Thanks so much to Amy for letting me share a fun little recipe with you.

These Healthy Homemade Chocolate Protein Bars are the perfect before or after school treat. No worrying about high-fructose corn syrup. They’re gluten free and almost vegan (just the chocolate chips). And bonus – they’re packed with protein! The only problem you may have is that they’re so delicious, you may want to hide them for your own treat stash.

No Bake Healthy Chocolate Protein Bars. Gluten Free Recipe.

Before we start with the recipe, here’s what you’ll need:

Ingredients –

  • Dates
  • Walnuts
  • Gluten Free Oatmeal
  • Cashew Meal (Found mine at Trader Joe’s)
  • Organic Maple Syrup
  • Salt
  • Dark Chocolate Chips

Kitchen Supplies –

  • 9×9 pan (glass or metal)
  • Parchment paper
  • Food Processor
  • Small Roller
  • Spatula
  • Glass or Oven-Proof Bowl
  • Stovetop Pan (that’s smaller than the glass/oven-proof bowl)

No Bake Chocolate Protein Bars

Easy homemade chocolate protein bars are a perfect healthy snack. This gluten free recipe packed with protein and calcium has the taste you love without the guilt!

  • 2 Dates (pitted)
  • 1/2 cup Walnuts
  • 1/2 cup Gluten Free Oatmeal
  • 1 1/2 cup Cashew Meal
  • 2 tablespoons Organic Maple Syrup
  • 1 3/4 cup Dark Chocolate Chips
  • pinch of salt
  1. In a food processor, mix the dates, walnuts, oatmeal and cashew meal until ground together.
  2. Add maple syrup, salt and mix until it forms a dough.
  3. Line a 9×9 pan with parchment paper.
  4. Pour the dough into the pan and smooth it out with a spatula or small rolling pin.
  5. Create a double boiler by bringing water to boil in a small pan and placing a heat-proof bowl that is slightly larger than the pan over it. Pour the chocolate chips into the bowl and stir until completely melted.
  6. Once the chocolate is melted, pour over the cookie layer in the pan.Slightly shift the pan back and forth on the counter. This will help you achieve a smooth chocolate layer.

  7. Place the pan in the refrigerator or freezer until completely hardened.
  8. Remove the protein bars by pulling on the sides of the parchment paper. Cut into squares or bars and serve.

Add more maple syrup for sweeter bars.

When I got our new ice cream maker, I tried various chocolate recipes and adding Rolos has become one of the family’s favorite ice cream flavors. I hope you enjoy this easy homemade Rolo Chocolate Ice Cream recipe and free printable ice cream wrappers!

Homemade Rolo Ice Cream Recipe

You’ll need:

  • 20 small Rolos
  • 2/3 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1/3 cup packed brown sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract

Directions

  1. Mix the cocoa powder and sugars together in a bowl. Stir with a whisk to remove lumps. Stir in the cream, milk and vanilla.
  2. Place half of the Rolo candy in a microwave dish and melt for 30-60 seconds. Stir until smooth. Let this cool for about 4-5 minutes before stirring it into the ice cream mixture. Chop the rest of the Rolos to save for later.
  3. You can cover the ice cream mixture and refrigerate until ready to churn.
  4. Churn your mixture in an ice cream maker for 20-25 minutes. When the ice cream is frozen enough, spoon into a container, then sprinkle the top with chopped Rolos.

Best Grilled Salmon Burger Recipe!

Salmon burgers are a super fast, go-to meal for my family. Not only is this a delicious salmon recipe, but a healthy alternative to the usual burgers. If you aren’t a fan of fish, but want to learn to like it… this recipe is for you! My son won’t try anything new and even he loves these juicy salmon burgers. I tricked him when he was little by calling them Sponge Bob’s WORLD FAMOUS Krabby Patties. Worked like a charm! ha!

When you are ready to fire up your grill this summer, I hope you’ll try these amazing salmon burgers! No grill? No problem! I have directions for both the grill and the stove top. Both are super easy and either way you cook them is awesome!

I usually make these salmon patties and serve with mashed potatoes. It’s a comfort food that reminds me of my childhood. Oh how I loved salmon pattie night! But, adding them to a hamburger bun was the way I got my kids to try something new years ago and I’ve been hooked ever since!

If you’re watching your carbs, these salmon patties are amazing on top of a salad. This recipe doesn’t call for capers, but if you like capers as much as I do, I suggest adding some to your salad. You won’t be sorry.

Fresh or canned salmon?

Fresh cooked salmon certainly is delicious and will work, but it will take up more time. I use this wild Alaska canned salmon or salmon pouches. I really like salmon pouches because they come boneless and very easy to rip open with less mess. Bonus, you can keep them handy in your pantry ready to go for this meal anytime of the week!

Best Grilled Salmon Burger

This is the best grilled salmon burger recipe! Fire up the grill for these delicious salmon patties. Crispy and crunchy on the outside, tender and juicy on the inside. These salmon burgers are a quick and easy healthy dinner idea!

  • 6  slices  whole-wheat sandwich bread (use 3/4 cup bread crumbs if you don’t have a food processor)
  • 16-20  ounces  cooked salmon (4 pouches of 5 oz boneless salmon)
  • 2  eggs (lightly beaten)
  • 2  scallions (chopped)
  • 1/4  cup  chopped fresh cilantro leaves
  • 1/2  tsp  freshly ground black pepper
  • 3  tsp  olive oil
  • hamburger buns
  • lemon wedges
  1. Remove crusts from the bread, break into pieces and process in a food processor until you get a fine bread crumb. (use 3/4-1 cup of Panko bread crumbs as an alternative)
  2. In a large bowl, mix the salmon and eggs together.
  3. Add chopped scallions, cilantro, pepper, and the bread crumbs to the mix.
  4. Shape into burger patties.

For cooking on the grill:

  1. Preheat grill for medium-high heat.
  2. Spray a large piece of heavy foil with grilling spray, place over grill grates.
  3. Brush each side of salmon patties with olive oil.
  4. Add salmon patties to foil and cook for 5 minutes on each side.
  5. While the salmon cooks, spray buns with grilling spray and toast on the grill.

For cooking on a stove top:

  1. In a pan, heat half of olive oil over a medium heat.
  2. Add patties and cook a few of the patties for 5 minutes on each side. Add the remaining olive oil to the pan, and cook the rest of the salmon patties.

Serve on a hamburger bun with lemon wedges and your choice of toppings.
