I’ve jumped on the cauliflower band wagon and now can’t get enough of this amazing Buffalo Roasted Cauliflower recipe! If you have never liked cauliflower before, then this is the first recipe you should try. With only 50 calories per serving, it’s worth every spicy bite!

In our home, we love all things spicy, especially Buffalo sauce. I think my son goes through a bottle a week! This healthy version of fried cauliflower is up there with my favorite Buffalo chicken dip. As I’m trying to get my family to eat more vegetables, this Roasted Cauliflower has definitely been a hit.

For example, right after taking photos of this recipe, I handed a cup full to my husband. He said “Is this cauliflower? No thanks!” I convinced him to try it and he ate the whole cup! Believe me… it’s good!

Cauliflower is the hot new vegetable. I’m seeing it everywhere recently bought some tasty cauliflower sandwich thins to replace bread. Seeing it everywhere got me wondering why is it so popular? Basically, it comes down to the fact that cauliflower has a similar texture to potatoes, but without all the carbs. With so many people on specific diets such as Keto and limiting carbs, cauliflower become the new potato!

It also has almost as much vitamin C as oranges, plus high in fiber and water, which are important for preventing constipation, maintaining a healthy digestive tract, and lowering the risk of colon cancer.

We use our air fryer so much that I need a second one and I’m dying to get this 8 qt extra large air fryer soon.

Buffalo Roasted Cauliflower | Air Fryer and Oven Recipe

Easy low-carb Buffalo Roasted Cauliflower that turns out perfectly crispy in an air fryer or oven. This healthy version of fried cauliflower is full of flavor and a recipe you’ll love to make over and over again!

  • 5 cups cauliflower, chopped ((1 medium head))
  • 1/4 cup Buffalo wing sauce
  • 1 tsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1/2 tsp sea salt ((add more to taste))
  • 1 tablespoon white whole wheat flour
  • 1 tablespoon Buffalo wing sauce (for serving)
  1. In a large bowl, add the cauliflower, sauce, olive oil, garlic powder
  2. salt and flour. Toss until sauce coats all of the cauliflower.

Air Fryer Directions

  1. Spray the air fryer grill with cooking spray and add cauliflower.
  2. Set air fryer to 400 degrees and cook for 15 minutes. At 7 minutes toss cauliflower.
  3. Cook a few minutes longer if you prefer charred and crispy bites.
  4. After removing from air fryer, toss with a tablespoon of warmed sauce and serve.

Oven Directions

  1. Preheat oven to 450 degrees.
  2. Coat a baking pan with olive oil or cooking spray and spread cauliflower on pan evenly.
  3. Bake for 30 minutes. Tossing at the 15 minute mark so each side gets crispy.
  4. After removing from oven, toss with a tablespoon of warmed sauce and serve.

These tasty BLT wraps are perfect for a busy weeknight dinner or quick lunch.  Enjoy this easy homemade guacamole recipe and bacon, lettuce and tomato wrap recipe.

Dinner doesn’t have to be super fancy and wraps are always a favorite in my family. I’m happy to have Divian Connor, our amazing contributor, back with another quick and easy recipe idea!

We have had numerous wraps for lunch lately, as I am always stocked with flour tortillas. Seriously, you can make any sandwich combination and use a tortilla. I was hankering for a BLT sandwich, but my kids had used the last of the loaf of bread the day before on peanut butter sandwiches… but hey, I had flour tortillas, avocados and lemons. I decided to give it a go and really, this BLT wrap was so yummy! And bonus, my kids loved it.

Quick and Easy Homemade Guacamole

I have a new-found love of avocado and each time I head to the grocery store, I am buying four or five at a time. I love the creaminess of avocados. They are just so refreshing!

For the easy chunky homemade guacamole, I used one avocado, the juice from one lemon, two tablespoons of sour cream and a little salt and pepper to taste.

Using a spoon, mash and mix everything together. I like mine chunky, and really, the avocado is so creamy, the chunks melt in your mouth.

How to make BLT Wraps

For the wrap, cook a few slices of bacon and cut into chunks or crumble. Slice fresh tomato and cut up a bit of lettuce. I love lettuce with color and texture, so I purchased a small package called Artisan Lettuce I got at the grocery.

Simply layer your guacamole on your flour tortilla, then add lettuce, tomato and bacon pieces. Wrap by taking one side of the wrap and tucking it under the ingredients and roll.

BLT Wraps with Homemade Guacamole Recipe

BLT wrap with easy homemade guacamole recipe. Bacon, lettuce and tomato wraps are a delicious idea for lunch or a quick dinner.

  • 4 slices bacon, crumbled
  • 1 tomato, sliced
  • 1 cup lettuce
  • 4 flour tortillas

Homemade Guacamole

  • 1 avocado
  • 2 tablespoons sour cream

  • 1 pinch black pepper

Guacamole

This delicious baked salmon recipe is fast, easy and since you bake it in foil on a sheet pan, there is no pan to wash! Fresh basil, butter, lemon, asparagus and tomato are a great combination! Feel free to substitute the asparagus for your favorite green vegetable.

Lemon Basil Salmon Foil Bake

This sheet pan lemon basil salmon foil bake is a quick and easy low carb dinner recipe. With only 5-10 minutes of prep time, this healthy meal is sure to please any salmon lover.

  • 2-4 Salmon Fillets
  • 1/2 stick softened butter
  • 3 tbsp fresh basil (finely chopped)
  • 1 lemon (sliced)
  • 3 Roma Tomatoes (diced)
  • Fresh Asparagus
  • Salt
  • Fresh Ground Pepper
  • Foil
  1. Preheat oven or grill to 375°
  2. Mix the chopped basil into the softened butter and set aside
  3. Lay out foil for holding individual Salmon fillets. Foil should be about 12-15 inches in length
  4. Spray foil with non-stick cooking spray
  5. Place salmon in the center of the foil, skin side down
  6. Put a spoonful of the basil butter mixture on top of salmon and press down slightly with a spoon along the top of the salmon and sprinkle with salt and pepper
  7. Place 1 lemon slice on top of each salmon fillet
  8. Add 4 asparagus stems to each packet (rub butter mixture on top of asparagus for extra flavor)

  9. Sprinkle 2-3 tablespoons of the tomatoes on top of lemon layer
  10. Sprinkle with salt to taste and grind fresh pepper over the top
  11. Pull top and bottom of foil up and roll down until it seals in the center. Fold over the sides several time toward the center to seal and form the foil packet.
  12. Place foil packets on a baking sheet or directly on grill and bake for 20 minutes.
  13. Open steaming packets carefully and transfer to plates.

Baked Chicken Greek Salad with Avocado

Juicy baked chicken and fresh avocado slices loaded onto a homemade Greek salad is an irresistible low carb recipe packed with flavor!

Dressing

  • 1/2 cup balsamic vinegar
  • 2 teaspoons dijon mustard
  • 1/2 cup extra virgin olive oil
  • Salt and fresh ground pepper

Greek Salad

  • 2  large skinless boneless chicken breasts
  • 4  cups  romaine lettuce leaves (chopped)
  • 1  avocado (sliced)
  • 1 cucumber (halved and sliced)
  • 2  small tomatoes (cut into wedges)
  • 1/2  yellow pepper (chopped)
  • 1/2  red onion (chopped)
  • 1/4 cup Feta cheese (crumbled)
  • 1/4  cup  pitted kalamata olives (sliced)
  • 1/2 lemon
  • Fresh ground pepper

Dressing

  1. In a bowl, whisk the balsamic vinegar and mustard together.
  2. Slowly add the olive oil and blend.
  3. Season to taste with salt and pepper.
  4. Transfer to an air tight container and refrigerate until ready to use.

Baked Chicken

  1. Preheat oven to 425 degrees
  2. Add 2 tablespoons of dressing and chicken breasts to a large zipper bag or bowl and toss together.
  3. Lightly coat a baking dish or skillet that is oven and stovetop safe with cooking spray and place the chicken breasts into the dish.
  4. Brown the chicken breasts over medium-high heat for 2-3 minutes on each side.
  5. Remove from heat and bake in the oven for 15-18 minutes or until cooked all the way through (meat thermometer should read 165°). If your dish is not oven safe, place chicken into a casserole baking dish before putting in the oven.?Remove from oven, cover the dish with foil for 5 minutes to let the chicken rest before slicing for the salad.

Greek Salad

  1. While the chicken is baking, fill a large bowl with romaine lettuce.
  2. Combine the avocado, cucumber, tomatoes, yellow pepper, onion, Feta and olives.
  3. Squeeze the juice from a lemon wedge over the vegetables.
  4. Add the sliced chicken and sprinkle with fresh pepper to taste.
  5. Drizzle a tablespoon of dressing over the chicken.
  6. Serve this baked chicken greek salad with dressing on the side.

When I’m in a hurry I will often cook chicken breasts in a skillet on the stove, but often that makes my chicken a little tough or dry especially if I accidentally over cook it! With this simple baked chicken recipe, you’ll never have that problem. The meat comes out of the oven super moist and easy to slice.

Brown the chicken for a few minutes on each side in a skillet before placing into the oven. This gives your chicken a beautiful caramelized look and helps enhance the flavor during baking. Searing your meat will also kill off any unwanted bacteria sitting on the surface.

I like to use a cast iron skillet. If you don’t have one, use any kind of oven safe pan that will work for your stove top as well. If you don’t have any kind of dish that is both stove top and oven safe, use a regular skillet then transfer the chicken breasts into your favorite baking dish for the oven. Of course, you don’t need to brown your meat before baking, but I really love how much more appetizing it looks and the depth of flavor is a bonus!

  • 4 boneless skinless chicken breasts
  • 2 tablespoons extra virgin olive oil (or grapeseed oil if you prefer)
  • 3 cloves garlic (minced)
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh ground black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon parsley (chopped)
  • 4 lime slices
  1. Preheat oven to 425°
  2. Add olive oil, garlic, honey, lime juice, soy sauce, salt, pepper and chicken breasts to a large zipper bag or bowl and toss together.
  3. Lightly coat a baking dish or skillet that is oven and stovetop safe with oil and place the chicken breasts into the dish.

  4. Brown the chicken breasts over medium-high heat for 2-3 minutes on each side.

  5. Remove from heat and add a large spoonful of marinade over each chicken breast.

  6. Bake in the oven for 15-18 minutes or until cooked all the way through (meat thermometer should read 165°). If your dish is not oven safe, place chicken into a casserole baking dish before putting in the oven.

  7. Remove from oven, top each chicken breast with lime wedges and parsley.

  8. Cover the dish with foil for 5 minutes before serving.

NOTE: Extra virgin olive oil should not smoke in an oven at this oven temperature and with this short amount of baking time, but you can use grapeseed oil or omit the olive oil if you prefer. Grapeseed oil has a higher smoking point than EVOO.

I’ve made super creative school lunches like these Powerpuff Girls Sandwiches, but there is no way I can do that everyday!

To help with planning ahead for fun but simple school lunches, I designed a free printable lunch box meal planner – basically a weekly calendar to help parents get organized. I also put together a free printable list with 85 school lunch items to add to your kid’s lunch boxes.

Both of my kids are very picky, so I do my best to find healthy foods to pack for their lunch. My daughter is pretty easy and loves when I add cute notes or draw on her food with edible markers.

Finding creative school lunch ideas for my middle school aged son, who is the most picky, is really challenging. Here are a few school lunch ideas I have packed for him. They might not be the healthiest ideas around, but it’s a start to get him to try SOME healthy things.

Make your own pizza bagels and writing notes on napkins is always fun! He is now in high school and I still make this for his lunch sometimes. Bagels are great for school lunch, because they fill up the always hungry boys and don’t get soggy like bread. We love to use these –> Easy Lunch Boxes!

How to make No Bake Healthy Chocolate Protein Bars

Hi Living Locurto friends! I’m Heidi, lover of champagne and watermelon bubblegum. I adore entertaining and throwing beautiful parties on a budget. Thanks so much to Amy for letting me share a fun little recipe with you.

These Healthy Homemade Chocolate Protein Bars are the perfect before or after school treat. No worrying about high-fructose corn syrup. They’re gluten free and almost vegan (just the chocolate chips). And bonus – they’re packed with protein! The only problem you may have is that they’re so delicious, you may want to hide them for your own treat stash.

No Bake Healthy Chocolate Protein Bars. Gluten Free Recipe.

Before we start with the recipe, here’s what you’ll need:

Ingredients –

  • Dates
  • Walnuts
  • Gluten Free Oatmeal
  • Cashew Meal (Found mine at Trader Joe’s)
  • Organic Maple Syrup
  • Salt
  • Dark Chocolate Chips

Kitchen Supplies –

  • 9×9 pan (glass or metal)
  • Parchment paper
  • Food Processor
  • Small Roller
  • Spatula
  • Glass or Oven-Proof Bowl
  • Stovetop Pan (that’s smaller than the glass/oven-proof bowl)

Enjoy this Healthy Homemade Chocolate Protein Bars Recipe!

No Bake Chocolate Protein Bars

Easy homemade chocolate protein bars are a perfect healthy snack. This gluten free recipe packed with protein and calcium has the taste you love without the guilt!

  • 2 Dates (pitted)
  • 1/2 cup Walnuts
  • 1/2 cup Gluten Free Oatmeal
  • 1 1/2 cup Cashew Meal
  • 2 tablespoons Organic Maple Syrup
  • 1 3/4 cup Dark Chocolate Chips
  • pinch of salt
  1. In a food processor, mix the dates, walnuts, oatmeal and cashew meal until ground together.
  2. Add maple syrup, salt and mix until it forms a dough.
  3. Line a 9×9 pan with parchment paper.
  4. Pour the dough into the pan and smooth it out with a spatula or small rolling pin.
  5. Create a double boiler by bringing water to boil in a small pan and placing a heat-proof bowl that is slightly larger than the pan over it. Pour the chocolate chips into the bowl and stir until completely melted.
  6. Once the chocolate is melted, pour over the cookie layer in the pan.Slightly shift the pan back and forth on the counter. This will help you achieve a smooth chocolate layer.

  7. Place the pan in the refrigerator or freezer until completely hardened.
  8. Remove the protein bars by pulling on the sides of the parchment paper. Cut into squares or bars and serve.

Add more maple syrup for sweeter bars.

Salmon burgers are a super fast, go-to meal for my family. Not only is this a delicious salmon recipe, but a healthy alternative to the usual burgers. If you aren’t a fan of fish, but want to learn to like it… this recipe is for you! My son won’t try anything new and even he loves these juicy salmon burgers. I tricked him when he was little by calling them Sponge Bob’s WORLD FAMOUS Krabby Patties. Worked like a charm! ha!

When you are ready to fire up your grill this summer, I hope you’ll try these amazing salmon burgers! No grill? No problem! I have directions for both the grill and the stove top. Both are super easy and either way you cook them is awesome!

If you’re watching your carbs, these salmon patties are amazing on top of a salad. This recipe doesn’t call for capers, but if you like capers as much as I do, I suggest adding some to your salad. You won’t be sorry.

Fresh or canned salmon?

Fresh cooked salmon certainly is delicious and will work, but it will take up more time. I use this wild Alaska canned salmon or salmon pouches. I really like salmon pouches because they come boneless and very easy to rip open with less mess. Bonus, you can keep them handy in your pantry ready to go for this meal anytime of the week!

Best Grilled Salmon Burger

This is the best grilled salmon burger recipe! Fire up the grill for these delicious salmon patties. Crispy and crunchy on the outside, tender and juicy on the inside. These salmon burgers are a quick and easy healthy dinner idea!

  • 6 slices whole-wheat sandwich bread (use 3/4 cup bread crumbs if you don’t have a food processor)
  • 16-20 ounces cooked salmon (4 pouches of 5 oz boneless salmon)
  • 2 eggs, lightly beaten
  • 2 scallions, chopped
  • 1/4 cup chopped fresh cilantro leaves
  • 1/2 tsp freshly ground black pepper
  • 3 tsp olive oil
  • hamburger buns
  • lemon wedges
  1. Remove crusts from the bread, break into pieces and process in a food processor until you get a fine bread crumb. (use 3/4-1 cup of Panko bread crumbs as an alternative)

  2. In a large bowl, mix the salmon and eggs together.
  3. Add chopped scallions, cilantro, pepper, and the bread crumbs to the mix.
  4. Shape into burger patties.

For cooking on the grill:

  1. Preheat grill for medium-high heat.
  2. Spray a large piece of heavy foil with grilling spray, place over grill grates.
  3. Brush each side of salmon patties with olive oil.
  4. Add salmon patties to foil and cook for 5 minutes on each side.
  5. While the salmon cooks, spray buns with grilling spray and toast on the grill.

For cooking on a stove top:

  1. In a pan, heat half of olive oil over a medium heat.
  2. Add patties and cook a few of the patties for 5 minutes on each side. Add the remaining olive oil to the pan, and cook the rest of the salmon patties.

Serve on a hamburger bun with lemon wedges and your choice of toppings.

      Mixing two of my favorite ingredients together is so delicious! Just a few spoonfuls of pesto, cream cheese and cracked pepper adds a fresh and creamy flavor to the baked chicken rolls. It also helps keep the chicken moist while baking.

      After spreading the cream cheese and pesto mixture on the chicken breasts, I like to roll my chicken, then dip into breadcrumbs and bake.

      For a quick side, asparagus is wonderful drizzled in olive oil and tossed in sea salt and cracked pepper. Roast it in the oven at the same time your chicken is cooking for a perfect meal.

      Crispy Oven Baked Chicken Pesto Rolls

      Crispy Oven Baked Chicken Rolls are a simple dinner idea! Easy chicken rolls recipe filled with pesto and cream cheese baked until golden brown. Serve with roasted asparagus for a low carb recipe and Keto diet meal.

      • 4 thinly sliced chicken breasts
      • 1 egg
      • 1 cup breadcrumbs
      • 2 tablespoons reduced-fat cream cheese
      • 1 tablespoon pesto
      • Freshly ground pepper
      1. Preheat oven to 400°F.
      2. Combine cream cheese, pesto and pepper in a small bowl.
      3. Place wax paper or foil over one chicken breast on a plate and beat with a rolling pin to thin even more.

      4. Spread a spoonful of cream cheese mixture on the chicken breast and roll it up.
      5. Beat the egg in a bowl. Place bead crumbs in a dish.
      6. Use a spoon to rub some egg on the chicken roll
      7. Gently place the chicken roll in the breadcrumbs dish and cover entirely with the crumbs.
      8. Place on a baking sheet coated with cooking spray. Add a toothpick in the middle to hold the chicken roll together.
      9. Repeat until all chicken breasts are in the baking dish.
      10. Bake for 20-25 minutes until golden brown and crispy.

      If you want the top of chicken to be extra crispy, turn the oven on high broil for the last 3-5 minutes of bake time.
