I started making this for my son way back when he was in kindergarten. All he would eat was chicken nuggets and hot dogs then, so I had to try something healthier than fast food nuggets! I was thrilled when he was happy eating my homemade version.

Make your family happy too with this quick and easy chicken recipe. If you have picky kids like me, believe me, you’ll love this one! Kids will love if you make chicken nuggets or strips for dipping. Serve this crispy chicken with your favorite vegetables and homemade sweet potato chips.

Crispy Oven Baked Chicken

Easy crispy oven baked chicken recipe your family will love for dinner! Only 10 minutes of prep time for healthy oven fried chicken!

  • 4 boneless skinless chicken breasts (cut into bite size pieces or strips)
  • 3 cups Corn Chex cereal (crushed)
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 2 tablespoons butter (melted)
  • 2 tablespoons low fat milk
  1. Preheat oven to 400°.
  2. Line a baking sheet with foil and spray with oil.
  3. Place Cereal, Parmesan, salt, garlic powder, and paprika into a gallon zip lock bag.
  4. Mix milk and butter into a small bowl.
  5. Dip half of the chicken into the milk and butter
  6. Put chicken into the bag and shake it to coat all of the chicken. (Make sure to seal the bag!)
  7. Place chicken on baking sheet and repeat with the rest of the chicken.
  8. Bake for 14-16 minutes, turning chicken over halfway through.
  9. Serve Crispy Oven Baked Chicken with your favorite dipping sauce.

These Healthy Homemade Chocolate Protein Bars are the perfect before or after school treat. No worrying about high-fructose corn syrup. They’re gluten free and almost vegan (just the chocolate chips). And bonus – they’re packed with protein! The only problem you may have is that they’re so delicious, you may want to hide them for your own treat stash.

No Bake Healthy Chocolate Protein Bars. Gluten Free Recipe.

Before we start with the recipe, here’s what you’ll need:

Ingredients –

  • Dates
  • Walnuts
  • Gluten Free Oatmeal
  • Cashew Meal (Found mine at Trader Joe’s)
  • Organic Maple Syrup
  • Salt
  • Dark Chocolate Chips

Kitchen Supplies –

  • 9×9 pan (glass or metal)
  • Parchment paper
  • Food Processor
  • Small Roller
  • Spatula
  • Glass or Oven-Proof Bowl
  • Stovetop Pan (that’s smaller than the glass/oven-proof bowl)

No Bake Chocolate Protein Bars

Easy homemade chocolate protein bars are a perfect healthy snack. This gluten free recipe packed with protein and calcium has the taste you love without the guilt!

  • 2 Dates (pitted)
  • 1/2 cup Walnuts
  • 1/2 cup Gluten Free Oatmeal
  • 1 1/2 cup Cashew Meal
  • 2 tablespoons Organic Maple Syrup
  • 1 3/4 cup Dark Chocolate Chips
  • pinch of salt
  1. In a food processor, mix the dates, walnuts, oatmeal and cashew meal until ground together.
  2. Add maple syrup, salt and mix until it forms a dough.
  3. Line a 9×9 pan with parchment paper.
  4. Pour the dough into the pan and smooth it out with a spatula or small rolling pin.
  5. Create a double boiler by bringing water to boil in a small pan and placing a heat-proof bowl that is slightly larger than the pan over it. Pour the chocolate chips into the bowl and stir until completely melted.
  6. Once the chocolate is melted, pour over the cookie layer in the pan.Slightly shift the pan back and forth on the counter. This will help you achieve a smooth chocolate layer.

  7. Place the pan in the refrigerator or freezer until completely hardened.
  8. Remove the protein bars by pulling on the sides of the parchment paper. Cut into squares or bars and serve.

Add more maple syrup for sweeter bars.

Apple Streusel Cheesecake Bars

This incredible recipe came from the kitchen of my friend Sierra.  Apple Streusel is more of a fall favorite yet I often find myself making this dessert in the spring!  It’s amazing all year round, really.  It comes together quickly and easily and is best made in the morning or the day before you want to eat it (so it has plenty of time to cool and refrigerate).  That’s the only downside-I’m not good a waiting to eat something this delicious.

Apple Streusel Cheesecake Bars

Ingredients:

Crust:

  • 2 C Flour
  • 1/2 C Brown Sugar
  • 1 C Butter (softened)

Filling:

  • 2 (8oz) blocks Cream Cheese
  • 1/2 C Sugar
  • 2 Eggs
  • 1 tsp Vanilla

Apple Filling:

  • 3 Granny Smith Apples (peeled, cored & finely chopped)
  • 2 Tbsp Sugar
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg

Streusel Topping:

  • 1 C Brown Sugar
  • 1 C Flour
  • 1/2 C Oats
  • 1/2 C Butter (softened)

*optional: 1 Jar Caramel Topping

Method:

In a medium bowl, combine flour and brown sugar.  Cut in butter with a pastry blender or fork until mixture is crumbly.  Press evenly into a 9×13 pan.  Bake 15 minutes or until lightly browned.

While crust is baking, beat cream cheese with an electric mixer until smooth.  Beat in sugar, eggs and vanilla until smooth.  Pour over warm crust.

In a small bowl, stir together chopped apples, 2 Tbsp sugar, cinnamon and nutmeg.  Spoon evenly over cream cheese mixture.

In same small (now empty) bowl, cream together the streusel topping: brown sugar, flour, oats and butter.  Crumble streusel topping evenly on top of apples.

Bake for 30 minutes uncovered at 350° F.

*Optional:  Drizzle caramel topping on top!

I’m enjoying making DIY face masks at home to help my skin look brighter and healthier. Last week, we shared 5 Simple Homemade Honey Face Masks and now I love adding avocados to my masks!

Avocados are a fantastic fruit. Some even refer to it as the “super food”. Avocados have huge health benefits due to being loaded with vitamins and other nutrients.

As great as they are to eat, they are also amazing for your skin. You can use them to make wonderful masks that will leave your face feeling soft and hydrated. Avocados are a great antioxidant and loaded with vitamins C and E which are great for your skin. The fatty acid in them make a great moisturizer. Avocados have also been known to reduce redness and irritation as well as damaged skin cells.

So whip up a DIY mask using avocados the next time you really want to pamper yourself. You will not be disappointed!

Homemade Honey Avocado Face Mask

Ingredients:

  • 1 teaspoon honey
  • 1 teaspoon coconut oil
  • 1/4 ripe avocado
  • 2 drops rose essential oil (I use these pure therapeutic essential oils here)

I also love using Frankincense essential oil which came with my Young Living Premium Starter Kit. It helps reduce dark age/sun spots on skin. Any reason I can find to get rid of those yucky sun spots… I’m doing it!

Directions:

  1. Mash up the avocado really well, then add all other ingredients and mix well.
  2. Smooth the mask over your face and neck. Leave on your face for 15 minutes, the wash off with warm water.
