An Aperol Spritz is a simple to make skinny drink that is all the rage in Europe this summer! Watch for it to be popular in America soon. I think we’re all going to really like this low calorie adult version of orange soda!

I made several glasses of this Aperol Spritz recipe to try and it’s such a great summer cocktail! My husband who is not usually a drinker, had two of them after my photos were taken! With a very small amount of alcohol or calories, an Aperol Spritz is a great cocktail to make for a party or to sip at the pool. I’m adding it to my list of favorite low calorie cocktails for sure!

What is Aperol?

What is Aperol you ask? Well, I had a hard time finding it because it’s so popular right now, but there was ONE bottle left in my local liquor store. I was excited to whip up some of these simple skinny cocktails for you!

Aperol is made in Northern Italy with only 11 percent alcohol. It’s a deep orange color and tastes slightly bitter with a hint of sweet. It tastes like a mix of oranges and grapefruit. I read where it also contains rhubarb. Adding it with Prosecco and a splash of sparkling water makes this refreshing very trendy Aperol Spritz!

How to Make an Aperol Spritz

This is the basic recipe for an Aperol Spritz. If you like sweet drinks, I’m warning you that it’s very bitter. Feel free to add a splash of simple syrup or sugar.

I wanted to keep mine low calorie, so just squeezed several orange slices into my glass to make it less bitter. I don’t like sparkling water, but with extra fruit, I enjoyed my Aperol Spritz very much! It’s very refreshing!

An Aperol Spritz is a refreshing low calorie sparkling Italian cocktail perfect for any occasion! A delicious combination of sweet Prosecco with bitter citrus flavors garnished with orange slices. Easy skinny low calorie cocktail drink.

  • 4 oz Prosecco
  • 2 oz Aperol
  • 1 oz Sparkling Mineral Water (or Club Soda)
  • 2 slices of orange
  • Ice
  1. Pour Prosecco, Aperol and Sparkling Mineral Water into a wine glass.

  2. Gently stir, fill glass with ice and several slices of oranges. 

  3. Squeeze the juice from a few orange slices for a less bitter drink.

Salmon burgers are a super fast, go-to meal for my family. Not only is this a delicious salmon recipe, but a healthy alternative to the usual burgers. If you aren’t a fan of fish, but want to learn to like it… this recipe is for you! My son won’t try anything new and even he loves these juicy salmon burgers. I tricked him when he was little by calling them Sponge Bob’s WORLD FAMOUS Krabby Patties. Worked like a charm! ha!

When you are ready to fire up your grill this summer, I hope you’ll try these amazing salmon burgers! No grill? No problem! I have directions for both the grill and the stove top. Both are super easy and either way you cook them is awesome!

I usually make these salmon patties and serve with mashed potatoes. It’s a comfort food that reminds me of my childhood. Oh how I loved salmon pattie night! But, adding them to a hamburger bun was the way I got my kids to try something new years ago and I’ve been hooked ever since!

Fresh or canned salmon?

Fresh cooked salmon certainly is delicious and will work, but it will take up more time. I use this wild Alaska canned salmon or salmon pouches. I really like salmon pouches because they come boneless and very easy to rip open with less mess. Bonus, you can keep them handy in your pantry ready to go for this meal anytime of the week!

Best Grilled Salmon Burger

This is the best grilled salmon burger recipe! Fire up the grill for these delicious salmon patties. Crispy and crunchy on the outside, tender and juicy on the inside. These salmon burgers are a quick and easy healthy dinner idea!

  • 6  slices  whole-wheat sandwich bread (use 3/4 cup bread crumbs if you don’t have a food processor)
  • 16-20  ounces  cooked salmon (4 pouches of 5 oz boneless salmon)
  • 2  eggs (lightly beaten)
  • 2  scallions (chopped)
  • 1/4  cup  chopped fresh cilantro leaves
  • 1/2  tsp  freshly ground black pepper
  • 3  tsp  olive oil
  • hamburger buns
  • lemon wedges
  1. Remove crusts from the bread, break into pieces and process in a food processor until you get a fine bread crumb. (use 3/4-1 cup of Panko bread crumbs as an alternative)
  2. In a large bowl, mix the salmon and eggs together.
  3. Add chopped scallions, cilantro, pepper, and the bread crumbs to the mix.
  4. Shape into burger patties.

For cooking on the grill:

  1. Preheat grill for medium-high heat.
  2. Spray a large piece of heavy foil with grilling spray, place over grill grates.
  3. Brush each side of salmon patties with olive oil.
  4. Add salmon patties to foil and cook for 5 minutes on each side.
  5. While the salmon cooks, spray buns with grilling spray and toast on the grill.

For cooking on a stove top:

  1. In a pan, heat half of olive oil over a medium heat.
  2. Add patties and cook a few of the patties for 5 minutes on each side. Add the remaining olive oil to the pan, and cook the rest of the salmon patties.

Serve on a hamburger bun with lemon wedges and your choice of toppings.

    Mixing two of my favorite ingredients together is so delicious! Just a few spoonfuls of pesto, cream cheese and cracked pepper adds a fresh and creamy flavor to the baked chicken rolls. It also helps keep the chicken moist while baking.

    After spreading the cream cheese and pesto mixture on the chicken breasts, I like to roll my chicken, then dip into breadcrumbs and bake.

    Crispy Oven Baked Chicken Rolls are a simple dinner idea! Easy chicken rolls recipe filled with pesto and cream cheese baked until golden brown. Serve with roasted asparagus for a low carb recipe and Keto diet meal.

    • 4 thinly sliced chicken breasts
    • 1 egg
    • 1 cup breadcrumbs
    • 2 tablespoons reduced-fat cream cheese
    • 1 tablespoon pesto
    • Freshly ground pepper
    1. Preheat oven to 400°F.
    2. Combine cream cheese, pesto and pepper in a small bowl.
    3. Place wax paper or foil over one chicken breast on a plate and beat with a rolling pin to thin even more.

    4. Spread a spoonful of cream cheese mixture on the chicken breast and roll it up.
    5. Beat the egg in a bowl. Place bead crumbs in a dish.
    6. Use a spoon to rub some egg on the chicken roll
    7. Gently place the chicken roll in the breadcrumbs dish and cover entirely with the crumbs.
    8. Place on a baking sheet coated with cooking spray. Add a toothpick in the middle to hold the chicken roll together.
    9. Repeat until all chicken breasts are in the baking dish.
    10. Bake for 20-25 minutes until golden brown and crispy.

    If you want the top of chicken to be extra crispy, turn the oven on high broil for the last 3-5 minutes of bake time.

    I have become very much obsessed with sheet pan dinners! With only one pan to clean, you can’t go wrong with a sheet pan dinner.  This recipe for Sheet Pan Chicken Sausage and Vegetables is a quick low carb dinner you can whip up in no time! If your kids are super picky like mine, serve the chicken sausages in buns or sliced up into pasta. Sweet Italian chicken sausage tastes really good and surprisingly my kids eat it. That’s a win!

    Besides cooking this sheet pan dinner with red bell peppers, I added red onion, yellow squash and broccoli. Most sheet pan dinner recipes call for you to toss your food with seasonings directly on the pan, but I like to toss them in a bag for less mess.

    Here is my kitchen hack… use the grocery store bag that vegetables come in to coat your veggies with olive oil and seasonings. This way, you aren’t wasting a gallon zipper bag and would have probably thrown away that vegetable bag in the end anyway.

    Sheet Pan Chicken Sausage and Vegetables is a perfect recipe for a quick low carb healthy family dinner! A one pan easy meal full of Italian flavors on your dinner table in 30-minutes or less.

    • 6 sweet Italian chicken sausage links
    • 2 cups red bell peppers (thickly chopped)
    • 1/2 cup red onion (thickly chopped)
    • 1 cup yellow squash (thickly chopped)
    • 1 cup broccoli spears
    • 1 tablespoon olive oil (extra virgin)
    • 1/2 teaspoon Lawry's seasoned salt
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried parsley
    • 1/4 teaspoon cracked pepper
    1. Preheat oven to 425 degrees and spray a large baking sheet with cooking spray.
    2. Add bell peppers, red onions, squash and broccoli into a plastic bag.

    3. Add olive oil, seasoned salt, oregano, parsley and pepper into the bag. Seal and toss, coating the vegetables with seasoning.
    4. Spread the seasoned vegetables onto a greased baking sheet.
    5. Add sausages on the baking sheet and sprinkle everything with a dash of pepper.
    6. Place baking sheet into the oven and roast 20-25 minutes, or until the chicken sausages are cooked through completely.
    7. Garnish with fresh parsley and serve this easy sheet pan dinner.

    Want more carbs? Serve with rice, pasta or potatoes if you’d like!

    With our busy lives, I’m a huge fan of sheet pan dinners and I’m happy to share this new sheet pan salmon recipe that I think you’re going to LOVE!

    When I travel, I love trying new food. I was lucky enough to visit the island of St. John, right before Hurricane Irma slammed into the island. While there, I ate at The Longboard where they served up the most amazing spicy Brussels sprouts that I had ever eaten. When I asked about the spices, they said they used Sambal Oelek. Sambal Oelek is a chili paste made fiery red chilies, vinegar and salt. I had never heard of this! So I immediately ran out and got some when I got home. You can find it at most grocery stores and it will change your life! I use it in so many dishes now.

    Sambal chili paste is the perfect addition to this Sheet Pan Salmon recipe. A mixture of lime juice, honey and Sambal Oelek makes this salmon, Brussels sprouts, broccoli and peppers a mouthwatering dinner!

    This sheet pan dinner is super easy! Preheat your oven to high broil, spray your pan generously with cooking spray and arrange your salmon and vegetables on the pan.

    • 1/2  cup  freshly squeezed lime juice  (or juice of 2 limes)
    • 2 teaspoons Sambal chili paste
    • 2 tablespoons water
    • 3 tablespoons olive oil
    • 1 teaspoon parsley (minced, dried or fresh)
    • 1/4 teaspoon sea salt
    • 1/8 teaspoon ground pepper
    • 1 tablespoon honey
    • 1.25 lbs fresh salmon filet
    • 1.5 cups Brussels sprouts (halved)
    • 1/2 cup broccoli florets
    • 1/4 cup red bell pepper
    • 1/4 cup yellow bell pepper
    1. Preheat oven to broil on high heat. Spray a baking sheet with cooking oil spray and set aside.
    2. In a small bowl, whisk lime juice, chili paste, water, olive oil, parsley, salt, pepper and honey together.
    3. Arrange the salmon fillet, Brussels sprouts, bell peppers and broccoli on the prepared baking tray. Place a few slices of limes on the salmon.
    4. Pour marinade over everything and toss vegetables to coat.
    5. Broil about 10 minutes or until the Brussels sprouts are charred and the salmon is cooked. Remove from the oven and serve immediately.

    Easy Lemon Dip Filling

    The filling for this lemon trifle is actually a popular Living Locurto recipe! Easy Lemon Dip is light and fluffy and has just the right amount of lemon flavor. It’s mouth watering and oh so delicious!

    Easy lemon trifle recipe is a simple layered dessert.

    Here is what you need for these Lemon Trifles:

    • Non-fat Greek yogurt
    • Cool Whip
    • Instant lemon pudding
    • Angel food cake or pound cake
    • Fresh raspberries or strawberries
    • Lemons for garnish
    • Trifle bowl

    Serve it up in a large trifle serving bowl, which not only shows off the gorgeous layers, but will also feed a large crowd.

    I love making individual serving trifles for parties with mason jars, stemless wine glasses, plastic cups or mini trifle bowls pictured here.

    I love making this recipe with raspberries and strawberries because the red fruit really pops along side of the yellow lemon filling. And of course they create the perfect amount of tartness with the sweet lemon filling!

    Bake your own pound cake or buy one already made from your grocery store. I like to buy cake, because I usually need a homemade dessert last-minute. Use angel food cake for our lemon trifle if you want something lighter and low-carbs.

    How to make a Whipped Lemon Trifle

    Step 1: Whip up a batch of easy lemon dip and placed it in a gallon sized zipper bag.

    Step 2: Cut cake into bit size pieces.

    Step 3: Rinse and pat dry raspberries.

    Step 4: Place a layer of cake pieces in bottom of serving bowl.

    Step 5: Cut the corner off of the lemon filling bag and pipe a generous amount over first layer of cake.

    Step 6: Add a single layer of raspberries on top of the lemon filling layer.

    Step 7: Repeat until dish is full, ending with raspberries.

    Step 8: Decorate dish with a lemon slice (optional)

    Keep refrigerated or eat immediately.

    Lemon Trifle

    A simple whipped lemon trifle recipe layered dessert you can whip up in no time! Made with layers of pound cake, raspberries and a delicious lemon filling. Omit cake for low-carb dessert.

    • 2 5.3 oz ounce container non-fat Greek yogurt
    • 2 8 ounce containers non-fat Cool Whip
    • 2 3.4 ounce boxes instant lemon pudding mix
    • 1/2 pound cake cubed
    • 3-4 cups fresh fruit (strawberries or raspberries)
    • 2-3 Lemons sliced for garnish
    1. In a large bowl, mix yogurt, Cool Whip and pudding mix until completely combined.
    2. Add lemon mixture to gallon sized zipper bags and chill.
    3. Slice pound cake into cubes and place a layer of cake pieces on the bottom of serving dish.
    4. Cut the corner off of the lemon filled bag and pipe a generous amount over first layer of cake.
    5. Add a single layer of raspberries or strawberries on top of the Lemon Dip.
    6. Repeat until dish is full, ending with fruit.
    7. Cover and chill until ready to serve.
    8. Decorate dish with a lemon slice before serving.

    For a lighter version, use angle food cake.

    Bring a bit of Greece into your home by making some Tzatziki dip and inviting friends over for appetizers, then head to the movie together! Tzatziki works wonderful as either a low carb dip or sauce. It’s perfect drizzled over grilled chicken or served as a dip for a vegetable tray platter, olives, crackers and pita bread.

    I recently made this beautiful spread for my friends and it was a huge hit. All store bought goodies but the Tzatziki. So easy!! After going to Greece, I am now addicted to almond stuffed olives.     How to Make Homemade Low Carb Tzatziki Dip

    You’ll need:

    • ½ English cucumber, peeled and grated
    • 16 oz (2 cups) cold plain Greek yogurt (I think full fat tastes best)
    • 4 cloves garlic, grated
    • 1/4 cup chopped fresh dill
    • 1/4 cup finely chopped feta cheese
    • 1½ Tablespoon fresh squeezed lemon juice (½ lemon)
    • 1 tablespoon olive oil
    • ½ teaspoon salt, or more to your taste
    • black pepper to taste

    Finely chop the dill and feta cheese then set aside in a mixing bowl.
