Easy BLT Wraps with Homemade Guacamole

These tasty BLT wraps are perfect for a busy weeknight dinner or quick lunch.  Enjoy this easy homemade guacamole recipe and bacon, lettuce and tomato wrap recipe.

Dinner doesn’t have to be super fancy and wraps are always a favorite in my family. I’m happy to have Divian Connor, our amazing contributor, back with another quick and easy recipe idea!

We have had numerous wraps for lunch lately, as I am always stocked with flour tortillas. Seriously, you can make any sandwich combination and use a tortilla. I was hankering for a BLT sandwich, but my kids had used the last of the loaf of bread the day before on peanut butter sandwiches… but hey, I had flour tortillas, avocados and lemons. I decided to give it a go and really, this BLT wrap was so yummy! And bonus, my kids loved it.

Quick and Easy Homemade Guacamole

I have a new-found love of avocado and each time I head to the grocery store, I am buying four or five at a time. I love the creaminess of avocados. They are just so refreshing!

BLT wraps with easy homemade guacamole recipe. Bacon, lettuce and tomato wraps.

For the easy chunky homemade guacamole, I used one avocado, the juice from one lemon, two tablespoons of sour cream and a little salt and pepper to taste.

Using a spoon, mash and mix everything together. I like mine chunky, and really, the avocado is so creamy, the chunks melt in your mouth.

How to make BLT Wraps

For the wrap, cook a few slices of bacon and cut into chunks or crumble. Slice fresh tomato and cut up a bit of lettuce. I love lettuce with color and texture, so I purchased a small package called Artisan Lettuce I got at the grocery.

Simply layer your guacamole on your flour tortilla, then add lettuce, tomato and bacon pieces. Wrap by taking one side of the wrap and tucking it under the ingredients and roll.

BLT Wraps with Homemade Guacamole Recipe

BLT wrap with easy homemade guacamole recipe. Bacon, lettuce and tomato wraps are a delicious idea for lunch or a quick dinner.

  • 4 slices bacon, crumbled
  • 1 tomato, sliced
  • 1 cup lettuce
  • 4 flour tortillas

Homemade Guacamole

  • 1 avocado
  • 2 tablespoons sour cream
  • 1 lemon
  • 1/8 teaspoon salt
  • 1 pinch black pepper

Guacamole

  1. Use a spoon to scoop out the avocado into a medium bowl. Then add the juice from a lemon, sour cream, salt and pepper. Mash and mix with a fork, set aside.

  2. Cook a few slices of bacon and cut into chunks or crumble.
  3. Slice a fresh tomato and cut up a bit of lettuce.

  4. Layer the guacamole on your flour tortilla, then add lettuce, tomato and bacon pieces.
  5. Wrap by taking one side of the wrap and tucking it under the ingredients and roll.

It’s time to think about school lunches for your kids and a hot school lunch is always my family’s favorite. If you have kids that don’t like sandwiches, a hot school lunch is the way to go!

I like to wrap hot dogs and chicken nuggets in foil, but did you know you could also use a Thermos to make them stay warmer for much longer?

I didn’t realize how to use a Thermos properly until a few years ago. It’s really super simple and I can’t believe I wasn’t doing this when they were little!

Set the alarm a little early on the days you want to send a hot school lunch with your kids. All it takes is a microwave, hot water and a little extra time for a delicious hot school lunch!

Here are some fun hot lunch ideas and tips for using a Thermos to keep your kids lunch hot for hours!

How to Keep Food Hot in a Thermos

Ever wanted to know how to keep food hot inside of a Thermos? It’s so easy and only takes a few steps:

  1. Boil water by adding a large glass full of hot water into the microwave for 2-3 minutes.
  2. Fill the Thermos with boiling water, close the lid and let it sit inside for about 5 minutes.
  3. When you’re ready to fill the Thermos, pour out the water and add the food immediately. The Thermos should be piping hot!
  4. Cover your food with the lid as soon as you can to keep the heat inside of the container. The food will stay hot for hours! Don’t forget to add a spoon or fork into your kids lunch box.

20 Hot School Lunch Ideas for Kids

When you need some new ideas beside the usual soup in a kid’s Thermos,  here are some fun hot school lunch ideas. Your kids are sure to like one of these hot school lunch ideas.

  1. Chicken nuggets. Probably the most popular at our house!
  2. Corn on the cob.
  3. Pizza – Cut it into strips so it will fit inside a thermos and still be nice and warm when it’s time to hit the cafeteria.
  4. Bacon and scrambled eggs.
  5. Ravioli with butter.
  6. Rice and beans.
  7. Grilled cheese sandwich. Cut into strips.
  8. Spaghetti. A childhood favorite!
  9. Left over Chinese food.
  10. Layered tacos. Layer tortilla chips, taco meat and cheese. Chop lettuce and tomatoes and put in a small container for toppings.
  11. Mashed potatoes layered with grilled chicken and veggies.
  12. Mac and cheese – Add vegetables or hamburger crumbles.
  13. Mini pancakes – Put syrup and fruit in a small container for kids to add on top of the warm pancakes.
  14. Ramen noodles.
  15. Nachos. After heating the thermos, fill with tortilla chips and sprinkle with shredded cheese. The cheese should melt by the time your child is ready for lunch!
  16. Oatmeal with cinnamon and granola sprinkled on top.
  17. Hamburger sliders. Stack a few small hamburgers inside of the thermos.
  18. Chili with chips and cheese sprinkled on top.
  19. Pulled pork with barbecue sauce. Add a bun in the lunch box for a make your own sandwich lunch.
  20. Mixed vegetables with rice.

I had so much fun making sandwiches from The Powerpuff Girls! Here’s how I did it…

What you’ll need to Make The Powerpuff Girls Sandwiches:

  • A large round cookie cutter (I used a thermos – it worked just as well as a cookie cutter)
  • bottle caps for cutting small candy into circles
  • Salt-Water Taffy
  • Mini OREO Cookies
  • Provolone Cheese (Bubble’s hair)
  • Cheddar Cheese (Blossom’s hair)
  • Sushi Sheets (Buttercup’s hair)
  • Olives (mouth)
  • Strawberries
  • 1 Red Fruit Roll-Up
  • wax paper

The main challenge I faced when making The Powerpuff Girls sandwiches, was how to come up with a way to make their eyes. I was so happy with the way the taffy worked! I got a bag of taffy at my grocery store which had all of the colors I needed.

How to make eyes:

  1. Scrape the white filling out of a mini OREO.
  2. Find a white piece of taffy and roll it out thin with a rolling pin.
  3. Cut out a circle shape with a bottle cap. My taffy had red or black taffy in the white ones, but I just cut around the color.
  4. Do the same with a colorful piece of candy for the girl’s eye color. You can use a red fruit roll-up for the red eye.
  5. Now take a small piece of white taffy, roll it into a ball and flatten it out for the eyeball. Gently lay it on the Oreo wafer. Add some water on the back for it to stick.
  6. Add the OREO to the colorful round candy shape.
  7. Then roll out the white shape a little more with your rolling pin to make it larger than the colorful circle. Then add the rest of the eye onto the white circle. Set it aside on wax paper while you make the other eye.

Once you have the eyes finished, cut your bread into a circle, make your sandwich and add the eyes to the top.

Decorate the rest of the face with cheese or sushi sheets for the hair, then attach half of an olive for the mouth with a bit of cream cheese.

I used strawberries for Blossom’s bunny ears.

The Powerpuff Girls turned out super cute! This would make any little girl’s day at school.

Chocolate Coconut Almond Butter Recipe {in the blender!}

Chocolate Coconut Almond Butter Recipe

I’ve gone through several phases of completely eliminating sugar from my diet {see: 12+ Tips For Quitting Sugar}. I cut sugar completely out for an entire year, I’ve done several rounds of Whole 30, and in general I just try to stay away from sugar.  But that doesn’t mean that I don’t love a good sweet treat and this Chocolate Coconut Almond Butter is one of my favorites!

I also have a child with a peanut allergy and almond butter has been a great alternative for her.

This almond butter recipe is chocolatey, salty, sweet and tastes delicious with apples {adding natural sweetness}.

Chocolate Coconut Almond Butter 2

Ingredients 

  • 1 1/4 Cups Whole Almonds (I buy the 3 lb Kirkland brand from Costco)
  • 2 TBS Cocoa Powder
  • 2-3 TBS Coconut Oil (Can also use unsweetened coconut flakes)
  • 1/4 tsp Kosher Salt

(Alternate: For the full sugar version just add 3 TBS of sugar to the recipe)

Coconut Chocolate Almond Butter

Instructions

I use a Blendtec blender with a Twister Jar for this recipe.

  1. Add ingredients to Twister jar in order listed, and place Twister lid on jar.
  2. Hold Twister lid with one hand, and with other hand set on a Medium to Medium-High speed. Run for 40 seconds, turning Twister lid counterclockwise during blending.

Just Add Apples!

We spread this almond butter on apple slices and it’s PERFECT!

Our favorite?

We eat apples by the dozen at our house. I usually have almond butter and honey out for dipping. We tried the Apple Fries with Cinnamon. It took me about 5 minutes to bust this out when they got home from school. It’s a HIT!

That face on the left? That’s literally the first bite she tried and realized how yummy it was. She proceeded to tell me that it was better than every other fruit dip I’ve made. Homemade almond butter, toffee dip, you name it, she liked this better.

The only tweak we made to the recipe? We used Greek vanilla yogurt instead of regular vanilla yogurt. It was so yummy! This little treat is going into our permanent rotation.

  • In a mixing bowl, combine PediaSure Strawberry Banana Smoothie Powder and jam and stir until powder is absorbed and the jam is smooth
  • Spread desired amount of peanut butter and jam on some healthy multi-grain bread
  • You can store the remaining jam mixture in an airtight container in the refrigerator for several days
