Just Like Mom’s Pineapple Upside Down Cake

When I was growing up, every week my mother would make some kind of amazing cake.  We would come home from school, my dad from work and we would have dinner and dessert as a family. I remember it all so clear and each time I do, I smile.

While mom made a host of different cakes, one of our favorite cake recipes that she made definitely stands out to me the most… her pineapple upside down cake! I can still see Mom pulling out her huge rectangular baking pan, covering a piece of cardboard in aluminum foil and turning that cake upside down. It was amazing.

How to make a classic Pineapple cake From Scratch

I had not eaten a pineapple cake in years, but when I made this fun version of mom’s recipe with ice cream for summer, it brought back so many wonderful memories.

As you can see, I added vanilla ice cream, which is a simple twist to create a Pineapple Upside Down Ice Cream Cake! I’m a firm believer that nothing makes cake better than a nice scoop of ice cream! Something about the butteriness of the cake, paired with ice cream makes it so much more delicious.

 

With this recipe, we combine ice cream as a layer with the cake. What better way to enjoy a childhood memory!

Pineapple Upside Down Cake Ingredients

First of all, you’ll need two 9″ spring form cake pans to make this cake.

Springform Cake Pan

Pineapple Cake:

  • 2 1/4 cups of all purpose flour
  • 1 1/2 cups of sugar
  • 1 tsp of salt
  • 3 tsp of baking powder
  • 3 eggs
  • 1 1/2 cups granulated sugar
  • 1 tsp vanilla extract
  • 1 1/4 cup of Pineapple Juice
  • 1/8 cup of vegetable oil
  • 1 stick of butter (softened)

For Topping:

  • 1 Stick of butter melted
  • 1 cup of brown sugar
  • Pineapple slices or crushed pineapple
  • Maraschino Cherries

Vanilla Ice Cream

 

Easy Pineapple Upside Down Cake Recipe

For the pineapple cake, mix all dry ingredients and then add in your wet ingredients. Mix well.

In one 9 inch pan spring form pan, spread brown sugar evenly to coat the bottom of the pan. Pour your melted butter over it.

 

Top with pineapple slices and then the cherries.

Pour the cake cake batter over the top. Bake at 350 degrees for about 20 minutes or until top springs back at the touch. You can also stick in a toothpick to check if it is ready. If it comes out clean, it is done!

 

Allow the cake to cool inside the spring form pan and spray another cake pan with nonstick spray. Pour in your remaining batter and bake until done. Allow both layers to cool completely.

With a cup full of warm water, place your spatula in the warm water. Let your ice cream sit until it is slightly softened. Begin spreading ice cream on your pineapple/cherry layer of cake while in the spring form pan. The spring form pan will help the ice cream stay in place.

How long should I freeze this cake?

Freeze until the ice cream is firm about 15-30 minutes per layer.

Start with the first layer, then remove from freezer and top with the second layer of cake and freeze until ready to serve. After placing all the layers, allow Pineapple Upside Down Ice Cream Cake to completely freeze before slicing and serving.

How to Get Pineapple Upside Down Cake Out of the Pan

Place your cake stand upside down on top of your spring form pan, flip it over, remove the spring form and voila! Since this cake is frozen, dip a knife in warm water to make slicing easier.

Pineapple Cake

Cake Topping

  • 1/2 cup butter, melted ((one stick))
  • 1 cup brown sugar
  • 1 cup pineapple slices or crushed pineapple
  • 2 tbsp Maraschino cherries

Ice Cream

  • 2 cups Vanilla Ice Cream
  1. Preheat oven to 350 degrees.
  2. For the cake, mix all dry ingredients into a mixing bowl, then add in your wet ingredients. Mix well.
  3. You will need two 9″ springform pans.
  4. In the first pan, spread brown sugar evenly to coat the bottom of the pan. Pour your melted butter over it. Top with pineapple and cherries.
  5. Pour in half of the cake batter.
  6. Spray another cake pan with nonstick spray. Pour in your remaining batter and bake until done.
  7. Bake at 350 degrees for about 20 minutes or until top of cake springs back at the touch.
  8. Allow the cake to cool inside the spring form pans completely before adding layer of ice cream.
  9. Let your ice cream sit until it is slightly softened.
  10. Place a spatula in a cup full of warm water.
  11. While the cake is still in the pan, spread ice cream onto the pineapple/cherry layer of cake using the spatula, dipping continuously to help smooth out the ice cream. The spring form pan will help the ice cream stay in place.
  12. Freeze this cake layer until ice cream is firm. About 15-30 minutes.
  13. Remove from freezer and top with the second layer of cake.
  14. Place your cake stand upside down on top of your spring form pan, flip it over, remove spring form and you’re done!
  15. After placing all the layers, allow cake to completely freeze before slicing and serving.

Stick a toothpick into the baked cake to check if it is ready. If the toothpick comes out clean, it is done!

Dip a knife in warm water to easily slice the frozen cake.

What Is Passion Fruit?

Passion fruit is a type of tropical fruit grown all over the world. It has a hard, colorful rind and a juicy, seed-filled center. Passion fruit is a rich source of antioxidants and nutrients, especially fiber, vitamin C and vitamin A.

Passion Fruit Rum Punch

An easy Passion Fruit Tropical Rum Punch cocktail that will make you feel like you’re at the beach! Make a pitcher of this easy tropical rum drink recipe for your next party.

  • 2 1/2 cups pineapple juice
  • 2 cups coconut rum
  • 1 cup ice
  • 1/3 cup passion fruit pulp (or puree)
  • 2 cups ginger ale, chilled

Garnish (optional)

  • Lime slice
  • Passionfruit pulp
  • Pineapple slice
  1. In a blender, add the pineapple juice, rum and ice. Blend until smooth and pour into a pitcher or punch bowl.
  2. Add the passion fruit pulp or puree (either will work) and the chilled ginger ale. Stir to combine and keep chilled.
  3. When ready to serve, pour in cocktail glasses and garnish with a lime, pineapple slice and top with additional passion fruit pulp if you like.

If you don’t like coconut, substitute coconut rum with spiced rum.

For a mocktail drink, omit the rum.

If you love strawberry drinks, then this amazing Frozen Pineapple Strawberry Margarita is a must try cocktail recipe! I have an addiction to strawberries, especially during summer. I have fond memories of going strawberry picking when I was little. Did you ever do that? The smell of the rows and rows of fresh ripe strawberries is still in my mind! I’m super excited about this Tropical Pineapple Sangria recipe! Since my Skinny Sangria has been so popular, I couldn’t wait to try a new sangria recipe. Pineapple is definitely one of my favorite fruits along with mango. It sounds kind of odd, but these fruits mixed together and soaked in white wine and coconut rum make the perfect tropical drink combination. Plus it’s so easy to make! You’ll be the hit of the party if you bring a pitcher of this recipe!

To kick off the official summer fun here at Living Locurto, I wanted to make a tropical drink recipe for you. Believe me, this one is so easy and very delicious. This amazing Tropical Sangria is a perfect coconut rum cocktail for a luau party or just sipping by the pool. I originally came up with this recipe back in March 2016 and since then it’s become my most popular cocktail recipe to date!

I came up with this recipe after visiting a resort in the Cayman Islands where the beach bar tender made me a drink with pineapple juice and white wine. It was so simple and delicious! I tinkered with it even more by adding coconut rum and fruit to give it more of a piña colada taste. I really love how well it turned out!

Easy Tropical Pineapple Sangria Recipe

Pineapple Sangria Recipe

This Pineapple Sangria recipe is a perfect coconut rum drink for a luau or just sipping by the pool. A tropical twist on the traditional white wine sangria. Tastes like a piña colada, but much easier!?

  • 2 cups cut pineapples
  • 1 orange sliced
  • 1 mango sliced
  • 1 lime sliced
  • 2 cups pineapple juice ((two 6 fl oz cans))
  • 1/2 cup coconut rum
  • 1 bottle white wine ((Pinot Grigio))
  • 2 cups Sprite ((1 can))
  1. Add the fruit to a large pitcher. Be sure to save some of the fruit for garnish.
  2. Pour pineapple juice, rum and wine into pitcher and stir.
  3. Refrigerate the pineapple sangria for up to two hours.
  4. Add Sprite and stir before serving.
  5. Garnish pineapple sangria glass with tropical fruit and enjoy!
