Getting creative with summer entertaining and grilling can be easy with these simple party food ideas. Pizza and a vegetable tray are the perfect combination. After baking pizza on the grill, I’m totally hooked on pizza vs burgers or hot dogs for a barbecue! So you’ll notice some yummy Ristorante Pizza by Dr. Oetker on my patriotic party table. Easy 4th of July Low Carb Recipe

For a low carb option this 4th of July, this veggie tray is one of the easiest things to make! Along with the American flag vegetable tray and grilled pizzas, I made my favorite dill dip recipe and turned it blue to complete the American flag design. I searched through my cabinets to find a blue square container and once it was all together, I thought this veggie tray turned out terrific!

How Do You Make An American Flag Vegetable Tray?

Making this vegetable tray is as easy as 1,2,3! I have to admit that dipping the delicious crispy pizza into the dill dip is very tasty! I found these cute red, white and blue containers at Michaels and they were perfect for serving the grilled pizza.

Can you guess what I made the stars from? They are radishes cut with a small star fondant cutter! You could use cucumbers, but they won’t be as white. A star cookie cutter would be great too.

How Did You Make the Dill Dip Blue?

I added blue food coloring to my dill dip. I think using a blue sandwich container also helped it look bright colored. You’ll want to gradually add a few drops of food coloring until you get the desired blue you like. Get a blue container like mine on Amazon here.

What Will I Need for this American Flag Vegetable Tray Platter?

Here’s a list of what you’ll need. Feel free to use which ever red and white vegetables you prefer. I found the veggies that are the most popular in my home.

Dill Dip Ingredients

  • 1/2 cup Fat Free Sour Cream
  • 1/2 cup Mayonnaise
  • 8 oz. Light Cream Cheese
  • 1 tablespoon Fresh Dill, minced
  • 2 tablespoon Fresh Parsley, minced
  • 1 tablespoon Dried Minced Onion
  • 1 teaspoon Salt
  • 6-10 Drops of Blue Food Coloring

I’ve got the full directions that you can print below and also made a fun video! 

  1. Slice the vegetables and line them up on the cookie sheet in rows of white and red.
  2. Mix all ingredients of the dip together in a bowl. Gradually add a few drops of the food coloring until you get the desired blue.
  3. Add the dip to a square container and place in the top left side of the cookie sheet. Thinly slice a radish and cut stars then place in rows on the dip.
  4. Serve with grilled pizza and fruit for a fun and simple 4th of July dinner!

Easy American Flag Vegetable Tray Platter and Dill Dip Recipe. Easy low carb appetizer for a 4th of July party. Fun patriotic party veggie tray.

  • 1 Large Cookie Sheet
  • Square Container for the Dill Dip
  • Small Star Fondant Cutter
  • 3 Cucumbers
  • 10-15 Radishes
  • Cauliflower
  • Grape Tomatoes
  • 2 Red Peppers

DILL DIP

  • 1/2 cup Fat Free Sour Cream
  • 1/2 cup Mayonnaise

Just Like Mom’s Pineapple Upside Down Cake

When I was growing up, every week my mother would make some kind of amazing cake.  We would come home from school, my dad from work and we would have dinner and dessert as a family. I remember it all so clear and each time I do, I smile.

While mom made a host of different cakes, one of our favorite cake recipes that she made definitely stands out to me the most… her pineapple upside down cake! I can still see Mom pulling out her huge rectangular baking pan, covering a piece of cardboard in aluminum foil and turning that cake upside down. It was amazing.

How to make a classic Pineapple cake From Scratch

I had not eaten a pineapple cake in years, but when I made this fun version of mom’s recipe with ice cream for summer, it brought back so many wonderful memories.

As you can see, I added vanilla ice cream, which is a simple twist to create a Pineapple Upside Down Ice Cream Cake! I’m a firm believer that nothing makes cake better than a nice scoop of ice cream! Something about the butteriness of the cake, paired with ice cream makes it so much more delicious.

 

With this recipe, we combine ice cream as a layer with the cake. What better way to enjoy a childhood memory!

Pineapple Upside Down Cake Ingredients

First of all, you’ll need two 9″ spring form cake pans to make this cake.

Springform Cake Pan

Pineapple Cake:

  • 2 1/4 cups of all purpose flour
  • 1 1/2 cups of sugar
  • 1 tsp of salt
  • 3 tsp of baking powder
  • 3 eggs
  • 1 1/2 cups granulated sugar
  • 1 tsp vanilla extract
  • 1 1/4 cup of Pineapple Juice
  • 1/8 cup of vegetable oil
  • 1 stick of butter (softened)

For Topping:

  • 1 Stick of butter melted
  • 1 cup of brown sugar
  • Pineapple slices or crushed pineapple
  • Maraschino Cherries

Vanilla Ice Cream

 

Easy Pineapple Upside Down Cake Recipe

For the pineapple cake, mix all dry ingredients and then add in your wet ingredients. Mix well.

In one 9 inch pan spring form pan, spread brown sugar evenly to coat the bottom of the pan. Pour your melted butter over it.

 

Top with pineapple slices and then the cherries.

Pour the cake cake batter over the top. Bake at 350 degrees for about 20 minutes or until top springs back at the touch. You can also stick in a toothpick to check if it is ready. If it comes out clean, it is done!

 

Allow the cake to cool inside the spring form pan and spray another cake pan with nonstick spray. Pour in your remaining batter and bake until done. Allow both layers to cool completely.

With a cup full of warm water, place your spatula in the warm water. Let your ice cream sit until it is slightly softened. Begin spreading ice cream on your pineapple/cherry layer of cake while in the spring form pan. The spring form pan will help the ice cream stay in place.

How long should I freeze this cake?

Freeze until the ice cream is firm about 15-30 minutes per layer.

Start with the first layer, then remove from freezer and top with the second layer of cake and freeze until ready to serve. After placing all the layers, allow Pineapple Upside Down Ice Cream Cake to completely freeze before slicing and serving.

How to Get Pineapple Upside Down Cake Out of the Pan

Place your cake stand upside down on top of your spring form pan, flip it over, remove the spring form and voila! Since this cake is frozen, dip a knife in warm water to make slicing easier.

Pineapple Cake

  • 1/2 cup butter, melted ((one stick))
  • 1 cup brown sugar
  • 1 cup pineapple slices or crushed pineapple
  • 2 tbsp Maraschino cherries

Ice Cream

  • 2 cups Vanilla Ice Cream
  1. Preheat oven to 350 degrees.
  2. For the cake, mix all dry ingredients into a mixing bowl, then add in your wet ingredients. Mix well.
  3. You will need two 9″ springform pans.
  4. In the first pan, spread brown sugar evenly to coat the bottom of the pan. Pour your melted butter over it. Top with pineapple and cherries.
  5. Pour in half of the cake batter.
  6. Spray another cake pan with nonstick spray. Pour in your remaining batter and bake until done.
  7. Bake at 350 degrees for about 20 minutes or until top of cake springs back at the touch.
  8. Allow the cake to cool inside the spring form pans completely before adding layer of ice cream.
  9. Let your ice cream sit until it is slightly softened.
  10. Place a spatula in a cup full of warm water.
  11. While the cake is still in the pan, spread ice cream onto the pineapple/cherry layer of cake using the spatula, dipping continuously to help smooth out the ice cream. The spring form pan will help the ice cream stay in place.
  12. Freeze this cake layer until ice cream is firm. About 15-30 minutes.
  13. Remove from freezer and top with the second layer of cake.
  14. Place your cake stand upside down on top of your spring form pan, flip it over, remove spring form and you’re done!
  15. After placing all the layers, allow cake to completely freeze before slicing and serving.

Stick a toothpick into the baked cake to check if it is ready. If the toothpick comes out clean, it is done!

Dip a knife in warm water to easily slice the frozen cake.
