After baking pizza on the grill, I’m totally hooked on pizza vs burgers or hot dogs for a barbecue! So you’ll notice some yummy Ristorante Pizza by Dr. Oetker on my patriotic party table. It’s the best for grilling because of the delicious thin crust.

Easy 4th of July Low Carb Recipe

For a low carb option this 4th of July, this veggie tray is one of the easiest things to make! Along with the American flag vegetable tray and grilled pizzas, I made my favorite dill dip recipe and turned it blue to complete the American flag design. I searched through my cabinets to find a blue square container and once it was all together, I thought this veggie tray turned out terrific!

How Do You Make An American Flag Vegetable Tray?

Making this vegetable tray is as easy as 1,2,3! I have to admit that dipping the delicious crispy pizza into the dill dip is very tasty! I found these cute red, white and blue containers at Michaels and they were perfect for serving the grilled pizza.

Can you guess what I made the stars from? They are radishes cut with a small star fondant cutter! You could use cucumbers, but they won’t be as white. A star cookie cutter would be great too.

How Did You Make the Dill Dip Blue?

I added blue food coloring to my dill dip. I think using a blue sandwich container also helped it look bright colored. You’ll want to gradually add a few drops of food coloring until you get the desired blue you like. Get a blue container like mine on Amazon here.

I hope you enjoy this vegetable tray platter idea! If you grill some pizza or make this veggie tray for the 4th of July, share a photo with me on social media. I’d love to see how it turned out!

Buffalo Roasted Cauliflower

Incredibly easy, low-carb Buffalo Roasted Cauliflower that turns out perfectly crispy in an air fryer or oven. Served hot or cold, this healthy version of fried cauliflower is full of flavor and one recipe you’ll be making over and over again!

Delicious Buffalo Roasted Cauliflower Recipe

I’ve jumped on the cauliflower band wagon and now can’t get enough of this amazing Buffalo Roasted Cauliflower recipe! If you have never liked cauliflower before, then this is the first recipe you should try. With only 50 calories per serving, it’s worth every spicy bite!

In our home, we love all things spicy, especially Buffalo sauce. I think my son goes through a bottle a week! This healthy version of fried cauliflower is up there with my favorite Buffalo chicken dip. As I’m trying to get my family to eat more vegetables, this Roasted Cauliflower has definitely been a hit.

For example, right after taking photos of this recipe, I handed a cup full to my husband. He said “Is this cauliflower? No thanks!” I convinced him to try it and he ate the whole cup! Believe me… it’s good!

Why is Cauliflower so Popular?

Cauliflower is the hot new vegetable. I’m seeing it everywhere recently bought some tasty cauliflower sandwich thins to replace bread. Seeing it everywhere got me wondering why is it so popular? Basically, it comes down to the fact that cauliflower has a similar texture to potatoes, but without all the carbs. With so many people on specific diets such as Keto and limiting carbs, cauliflower become the new potato!

It also has almost as much vitamin C as oranges, plus high in fiber and water, which are important for preventing constipation, maintaining a healthy digestive tract, and lowering the risk of colon cancer.

Air Fried Cauliflower

With all of the great health benefits of cauliflower, I had to come up with a recipe for my air fryer. You don’t need an air fryer for this recipe as I have both the oven and air fryer recipe for you. But it’s so much quicker in the air fryer, that it might make you want to run out and buy one! We use our air fryer so much that I need a second one and I’m dying to get this 8 qt extra large air fryer soon.

How to Choose the Best Fresh Cauliflower

When choosing fresh cauliflower, know that it should have a firm head with no dark spots and bright green leaves attached to the stem. You can store it in the refrigerator in a plastic bag for up to 5 days.

This Buffalo roasted cauliflower is delicious both cold or hot. Serve it as an appetizer with blue cheese dipping sauce, a side dish with your dinner, loaded in a sandwich or make as a snack when you are craving something savory.

Sheet Pan Chicken Sausage and Vegetables is a perfect recipe for a quick low carb healthy family dinner! A one pan easy meal full of Italian flavors on your dinner table in 30-minutes or less.

Sheet Pan Chicken Sausage and Vegetables

I have become very much obsessed with sheet pan dinners! With only one pan to clean, you can’t go wrong with a sheet pan dinner.  This recipe for Sheet Pan Chicken Sausage and Vegetables is a quick low carb dinner you can whip up in no time! If your kids are super picky like mine, serve the chicken sausages in buns or sliced up into pasta. Sweet Italian chicken sausage tastes really good and surprisingly my kids eat it. That’s a win!

I recently did a poll on my Instagram story about red bell peppers vs green bell peppers. Turns out most of you like red bell peppers best!

Sheet Pan Chicken Sausage recipe and Bell Pepper poll. Which is best green peppers or red peppers?

I did a Google search to see which color of bell pepper is best and found this…

Red bell peppers boost your immune system due to high vitamin A, C and antioxidant properties, including beta carotene, which helps maintain healthy skin and vision. In fact, these mighty red vegetables contain 1.5 times more vitamin C, 8 times more vitamin A and 11 times more beta carotene than green bell peppers.”

So of course I had to pack this Sheet Pan Chicken Sausage dinner with lots of red bell peppers!

Sheet Pan Chicken Sausage and Vegetables is a perfect recipe for a quick low carb healthy family dinner!

After eating my way through Austin this past weekend for a conference, I felt a little better about myself by cooking with a rainbow of vegetables. Yes, after coming home I always “pretend” to be healthy after stuffing my face with tacos and cookies on my trips. LOL

If you want to see what I was up to in Austin, visit my Instagram post here. There are several photos on my post that you can click through. And YES, that is Andrew Shue, Billy from Melrose Place! (swoon!) Does that guy ever age? I don’t think so!

Simple Sheet Pan Dinner Kitchen Hack

Besides cooking this sheet pan dinner with red bell peppers, I added red onion, yellow squash and broccoli. Most sheet pan dinner recipes call for you to toss your food with seasonings directly on the pan, but I like to toss them in a bag for less mess.

Here is my kitchen hack… use the grocery store bag that vegetables come in to coat your veggies with olive oil and seasonings. This way, you aren’t wasting a gallon zipper bag and would have probably thrown away that vegetable bag in the end anyway.

I really hope you enjoy this idea for Sheet Pan Chicken Sausage and Vegetables! I make this a lot and can’t believe I’m just now putting this recipe on my website. If you are looking for more Low Carb Recipes, check out my category for them here.
